For me, love is hard to define…I know when I feel it and I know when I don’t…
Sometimes, I feel I can even quantify it; justify what I would do for it…
But ask me to define it and I am at a loss.
Some folks say love is as chemical a reaction as hunger and thirst are…
Others say that it is a form of security to ensure bonds that cannot be broken…

And, yup…I am taking you back to 2012 for a short sec, because in 2012, I developed a strong love (not to be confused with lust, in this case), for all things “yogurt covered”!
But, alas, a packaged “yogurt covered anything” -while sounding healthy- can carry a mind-numbing, limbs-moving-a-mile-a-minute-in-every-direction sugar high!
Over the years, I have experimented with low sugar or no sugar variations without much luck.
I have come across some pretty cool recipes that were low on sugar but were too time consuming for impatient ol’ me.
Then someone mentioned I could purchase “yogurt powder” and use it with coconut oil and my quest began…
While searching for yogurt powder, I happened to stumble on this packet of coconut milk powder. I remember my mom using it in dishes as a healthier thickener than cornstarch when we were younger…so Ifigured I wouldgive it a try instead of the yogurt powder.
However, my daughter, seeing I was “taste testing” the almonds quicker than she could chase me around the large kitchen island in our small kitchen to get to them, suggested I throw them all a dish, cover them with the yogurt covering and let them cool overnight.
Clearly, most of the arguments, the negotiations, the settlements, the bribes in our house involve – food!
We had “Bark” the next morning – gorgeous, deeeeliciously decadent, low sugar, healthier than store-bought, Almond And Coconut Bark!
My quantities only resulted in about 6 smallish pieces, but you can easily double or triple the ingredients for more.
You will love this bark; with one bite, you will crave it; you will want it in large quantities; you will fight off other customers from grabbing that last container of Blue Diamond Almonds so you can make this bark; you might not wanna share it, but sharing it might lead to bonds that will last for ever; love will be nurtured (in your heart and home) by the eating of this bark – again and again and again…just saying!
