As a food blogger, I thought I had a pretty unique gig.
I mean, how incredibly cool is it that my fellow food bloggers and I get to make some mullah testing out recipes, taking pictures of them and then enjoying them!

But, yesterday, I came across a gig more unique than the one I thought I had.
Yesterday I came across Mr. Keith Broni who makes a living as an emoji translator!
Up until yesterday, I didn’t realize there was such a thing (…and now am realizing this is what quite a few people think when I tell them I’m a food blogger…hmmm…)
But – that’s not all Mr. Broni does, he also conducts emoji spelling bees! Say what?!

While I do employ emojis from time to time, I’ve gotta admit I’ve been guilty of sending a totally inappropriate emoji in reply to a question or comment! Hence, the need for an emoji-translator!
Yes – I am totally emoji challenged – so I won’t be signing up for any emoji spelling bees anytime soon!
Fortunately, I have a daughter who joyously points out the error of my ways.
But, I have found a way to bribe distract her from keeping my emoji blunders off social media!
You see, that child’s thought process is ruled by her tastebuds, so if I feed her a tasty dinner of Almond Encrusted Lemon Salmon and follow it with a dessert of Strawberry Cashew Pudding Cups, she manages to forget everything else!  😆

This salmon is so easy to make. A while back, I came across caramelized lemon and chicken in a foodie magazine and have been using it in a variety of vegetarian and non-vegetarian dishes. One of my favorite ways to use caramelized lemon is with salmon – like you see here. I added a very light coating of Bob’s Red Mill Almond Flour (seasoned simply with salt and pepper) onto the salmon for a bit of crunchy texture and to make this more filling. Served with a side of broccoli, this meal was so tasty and lightly filling – leaving us just the right amount of room in our bellies to enjoy these delicious Strawberry Cashew Pudding Cups.

These Strawberry Cashew Pudding Cups are another easy and versatile dessert to replicate and enjoy. You could use any variety of berries you prefer – simply blend them up with cashews that have been soaked overnight in coconut milk – or any milk of your choice, add in some more coconut milk, a smidge of coconut oil, vanilla for flavoring and sweetener and chill and enjoy!

Or, you could go the chocolate route and make this chocolate version instead.

Almond-Encrusted Lemon Salmon & Strawberry Cashew Pudding Cups

Cook Time: 20 minutes
Total Time: 30 minutes

A light and delicious dinner of Almond Encrusted Lemon Salmon is followed by some decadently delicious, yet dairy-free and gluten-free, Strawberry Cashew Pudding Cups!

Ingredients

Almond-Encrusted Lemon Salmon

  • 1 lemon sliced and juice of half a lemon
  • 2 salmon fillets, (can leave skin on or remove)
  • 1 Tbsp Bob’s Red Mill Almond Meal
  • Salt and pepper to taste
  • Broccoli steamed
  • Olive oil

Strawberry Cashew Pudding Cups

  • 1 cup unsalted cashews soaked in coconut milk overnight
  • 12-13 ripe strawberries
  • ¼ cup full fat coconut milk
  • 1 Tbsp coconut oil
  • 1 tsp vanilla extract
  • 2-3 Tbsps of your choice of sweetener
  • Pinch of salt

Instructions

Almond-Encrusted Lemon Salmon

  1. Add olive oil to a cast iron skillet over a low-medium flame
  2. Add lemon slices to skillet and sauté a couple of minutes, flip and sauté on other side as well
  3. Meanwhile, squeeze the lemon juice over the salmon, season with salt and pepper
  4. Turn oven to broil and let preheat
  5. Then place salmon fillets skin side down in skillet with lemon slices and sauté about 3 minutes.
  6. Flip and sauté 3 minutes – at this point, when the skin is facing up, you can easily peel it off if desired.
  7. Flip the salmon fillets around again, sprinkle on the almond meal, season with a pinch of salt and pepper and broil for 4-5 minutes or till almond crust is golden
  8. Garnish with parsley and enjoy with steamed broccoli

Strawberry Cashew Pudding Cups

  1. Drain the cashews and place them in a blender
  2. Rinse off the strawberries, dry them well, remove the stems of 8-9 of them and place these 8 or 9 strawberries in the blender as well
  3. Add in the coconut milk, the coconut oil, vanilla, sweetener and salt
  4. Blend well
  5. Spoon into small/mini bowls and chill for 3 hours at least
  6. Garnish with strawberry jam glazed strawberries and enjoy

Two recipes in one post? Woo hoo! And both look amazing, Shashi! An emoji translator? What? That's pretty funny and kinda neat! I don't know what some of those emojis mean either and just learning some 'cool' phrases that are around lately, lol. I've never encrusted salmon before with actual almond meal before, but that's a brilliant idea!! It looks so moist and something I would LOVE! And those pudding cups? So pretty with the pink colour! Looks creamy dreamy! XOXO

I've been a huge fan of almond-encrusted seafood ever since I lived down in Louisiana! But funny thing is I don't think I've ever made it at home. That clearly needs to change after seeing this post. That salmon looks perfectly cooked!! And then finishing the meal off with a nice, light strawberry dessert? Sign me up, please! Also, an emoji translator? Pretty hilarious. But I often get the same looks as you when I say I write a food blog. People always think that I just go to local restaurants and write about 'em. Anyways, love this post, Shashi!
