Last night I was just dog-eared tired!

So, instead of doing Insanity’s 56 minute Max Cardio Conditioning DVD, my daughter and I chose to do Insanity’s 33 minute Insane abs DVD. I’ve done Insanity before and this time around, we are not really sticking to the suggested DVD rotation, we kind of pick and choose what DVD we are upto doing and go with it. I could not remember doing this one before, and was thrilled that the warm up started off pretty easy. Then we went into a whole bunch of sitting core work that was challenging, but, not as insane as I had been expecting.

I went to bed feeling good – like I had gotten in a workout, but not overdone it.

Then…I woke up this morning!

I am not quite sure how it happened, but that DVD managed to work muscles in my core I didn’t think I was working! Or, had!
I vaguely recall my high school anatomy teacher saying there were around 700 muscles distributed through our bodies – well, this morning, I think all 700 overworked muscles were hanging out in my core!

Just like the overabundance of muscles that seem to have gravitated to my core; there are an overabundance of almond crusted/coated salmon recipes out there. Some are spicy, some are sweet, and some are in-between!

Now, this salmon recipe isn’t anything new – nothing earth shattering in creativity, but, it was mind blowing in taste!

Sriracha Salmon

Since I was dog-eared tired last night, I decided to throw together a super simple Almond Sriracha Salmon dinner. I ground up Blue Diamond Almonds’ new Bold Sriracha Almonds, tossed them with some paprika and some lemon juice and coated some salmon fillets with it. I didn’t think it would be anything spectacular – but, good golly, those Sriracha Almonds made some magic happen on my stovetop! My daughter said that magic had to be shared (even though she wouldn’t share that 3rd piece with me), so, here it is!

A super simple and easy and super tasty, Almond Sriracha Salmon. Only three key ingredients went into this salmon dinner - which was ready in less than 30 minutes!

Ingredients

  • 1 cup Blue Diamond Bold Sriracha Almonds
  • 1 teaspoon paprika
  • 1 tablespoon lemon juice
  • 3 salmon fillets
  • 2 tablespoons extra virgin olive oil

Instructions

  • Place Blue Diamond Bold Sriracha Almonds in a food processor or blender and pulse till roughly ground up
  • Add in the paprika and the lemon juice
  • Rub the salmon fillets with the almond-paprika-lemon mix and let sit for about 10-15 minutes
  • Add EVOO to a pan over a medium flame and when warm, add the fillets and cook for 5-6 minutes on each side. I place a lid on top of the pan the last 2-3 minutes of cooking time on each side as this helps me keep the salmon tender.
  • Garnish with cilantro or parley before serving.

  2. Ohh this looks great. I’m sure the spicy crunch is totally yummy! I have done the Insanity and I must say I hate insanity. Did them all suffered from all of them! Good luck to you!!!

  3. I have to try the almond siracha, I don’t think they sell this brand at Whole Foods or Trader Joe’s. Great salmon.. I recently had an Almond Crusted Grouper in Aruba which was quite delicious.

    I’ve never tried an insanity workout myself but I’ve heard so many things about it. Well, mainly about the level of soreness after, haha! Love the combination of almond and sriracha! Sounds delish.

  7. Shashi, this salmon looks and sounds just fantastic! I would probably add smoked paprika instead of regular to accentuate the flavors though. P.S. Hope you muscles won’t be bothering your long!

    Always looking for new and easy ways to cook salmon. This one sounds stunning and well worth a try!

    I took a two-week break from exercising while I was overseas. Came back and saw my personal trainer for an hour and haven’t been able to walk since. Cannot believe how quickly you can lose fitness. Shocking. It’s lovely you and your daughter work out together. I love the look of your salmon dish xx

  15. Delicious salmon fillets and a breeze to throw together. Love that! . I have not seen that favor of almonds here in Hong Kong yet so hope they start supplying world wide. Just breathing I am sure hurts today, but just think how great your going to look in your bikini…!

    Oh man, Laura had me doing Insanity for a while back when we lived in Atlanta. I like to think I’m a fairly fit guy. I enjoy my desserts, but we hit the gym several mornings a week to offset those. But Insanity? Holy cow. I could barely walk after those days. I seriously had to like grab hold of the railing on the stairs and lower myself down each step. That is one intense workout! #Respect

    I love love love these chipotle Blue Diamond almonds! And we enjoy salmon around here, too…this needs to happen in our house. And soon! Looks delicious, Shashi!

  21. Ha! I love/hate workouts like that. In the moment I’m like mmmm this is kind of dumb (because I can’t tell what it’s working) and then I wake up and BOOM I’m so sore. And I’m like huh, well I guess that was a good workout! As for this salmon, I’m allllllll about it lady! Looks so good.
