Easy Apple Granola Crumble

Gluten Free, Apple Blueberry Granola by Bob’s Red Mill added some much needed oomph to my simple spiced apples; making this Apple Granola Crumble simply cravalicious!

So, cravalicious might not be a word – yet. But, y’all, this time of year my brain turns my tastebuds to pie and my crust-skill-lacking self turns to crumbles! And by crumbles, I don’t mean me crumbled up on the floor because Christmas is only 10 days away and I haven’t even started shopping for gifts for my family yet! Yikes! My idea of crumbles usually involves some sort of spiced fruit that is topped with spiced, oiled up oats on top. Crumbles have this ability to squash my cravings for pie – at least till Christmas eve comes along…

On Christmas eve this year, my daughter and I plan on doing what we did last year. Pick up a couple of packages of Bob’s Red Mill Gluten Free Pie Crust mixes, employ my friend, Lindsey’s knife technique, and have pecan, apple and pumpkin pies galore to enjoy on Christmas day! But till then, I feast on crumbles!

Recently when I received a package of Bob’s Red Mill Gluten Free Apple Blueberry Granola, I figured I’d use some of it to top one of my crumbles with – in addition to adding it to my morning yogurt. And, am so glad my brain turned to logic instead of pie for a few seconds because that Granola was so much more tastier a topping than my spiced and oiled oats were! I added some coconut oil and vanilla to the slightly sweetened Apple Blueberry Granola before I used it to top off the cinnamon, cardamom, ginger, nutmeg and vanilla spiced apples.

After a few minutes in the oven, my daughter and I dug lustfully into bowlfuls of this crumble topped with vanilla frozen yogurt – and you know what? We should have paid attention to the writing on the package when it mentioned “will keep you reaching for more” – as that’s exactly what we kept doing! Aaaaannnnnd…now you know why I haven’ even started shopping for my family yet…cos am holed up eating crumble!

This healthy, gluten free, Apple Granola Crumble is simply cravalicious - and does a pretty god job of squelching those pie cravings - for me at least!

Ingredients

For the Apple Filling:

  • 16 apples peeled and chopped I used Fuji but you can use your favorite
  • 1 tablespoon cinnamon
  • 2 teaspoons ginger
  • 1 teaspoon cardamom
  • 1 teaspoon nutmeg
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon salt
  • 4 tablespoons coconut sugar
  • 3 tablespoons coconut oil - melted
  • 1 teaspoon orange juice

For the Granola Topping:

  • 2 cups Bob's Red Mill Gluten Free Apple Blueberry Granola
  • 3-4 tablespoons coconut oil - melted
  • 2 teaspoons vanilla extract

Instructions

  • Preheat oven to 375 degrees
  • Meanwhile, add the chopped apples, cinnamon, ginger, cardamom, nutmeg, vanilla, salt, coconut sugar, coconut oil, and orange juice to a bowl and toss till well coated
  • Then place in a greased baking tray or skillet
  • In the same bowl, toss the Bob's Red Mill Gluten Free Apple Blueberry Granola with the coconut oil and vanilla and place this on top of the spiced apples
  • Bake for 30 minutes - start checking on the crumble around the 20 minute mark to keep it from browning, can place a piece of aluminum foil on the top to prevent this.
  • Enjoy warm with a scoop of vanilla ice cream, frozen yogurt or coconut cream. Toss some extra Bob's Red Mill Gluten Free Apple Blueberry Granola on top for even more flavor!

    And, I seriously hope that I get the skillet that I’ve been asking for, for every year for Christmas for the last few years. Lol.

    I mean I know I could make this in a greased baking tray as your recipe suggests Shashi, but I want to make it in a skillet cause then it’ll look just like yours!

I always wait until the last minute and then promise myself next year I won’t procrastinate, but I just end up procrastinating again. I also happen to love cooked apples, so this combo sounds like my happy place. I can totally understand why you haven’t gone shopping yet. I kinda want to just sit down with this skillet, a spoon and the tv. Is that allowed? Also, cravalicious is now a word! I love it!
