Banana Matcha Oatmeal Pancakes with Cinnamon Cream Bananas

After a waffle heavy couple of weeks in our neck of the interwebs, I decided to pancake it up this weekend and made these super simple, 6-ingredient, protein-packed, Banana Matcha Oatmeal Pancakes.

In the 18 years I’ve known her, my daughter has always preferred to go wild with her choice of pancake toppings.
There was this brief period of time when she would only eat pancakes topped with ketchup and mustard.
Then there was the ice cream phase which morphed into the eggs and cheese one!
When most people were enjoying their avocados smashed on toast, my daughter was enjoying them smooshed on pancakes – with parmesan!

I, on the other hand, have pretty tame (I think) choices when it comes to pancake toppings.
I’d much rather have a smear of jam or sauteed bananas or apples with mine…unless they were chocolate (in which case all the chocolate chips and cookies in the house end up on top of them!).

But – to enjoy pancake toppings, there’s gotta be some pancakes – right?

Banana Matcha Oatmeal Pancakes

After feasting on waffles last week, this weekend I decided to give my waffle-maker a break and whipped up these super-simple, Banana Matcha Oatmeal Pancakes.
These bad boys are made with ground up rolled oats – making them very similar to these Oatmeal Pancakes.
However, instead of using almond milk, I used Premier Protein’s Bananas & Cream Protein Shake and, added in a smidge of matcha powder.
While matcha is on the pricey side, these pancakes come nowhere close to the $200 price tag of these ones found at Opus in the Printworks in England – which are said to contain Madagascan vanilla pods and 23-carat gold leaf!

I ended up sauteing some bananas with brown sugar and cinnamon to go on top of these pancakes, but, then had the idea to add in some of that Premier Protein’s Bananas & Cream Protein Shake into the saute and I gotta say, the result was pretty darn delicious! So delicious, I had a hard time prying the pan away from my oddball-pancake-toppings-loving daughter!

Banana Matcha Oatmeal Pancakes with Cinnamon Cream Bananas

Ingredients

For the pancakes

  • 1 cup oat flour I used ground up rolled oats
  • 1 cup Premier Protein’s Bananas & Cream Protein Shake
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons matcha
  • 1 egg
  • -coconut oil for griddle or pan.

For the topping

  • 2 bananas sliced
  • 2 tablespoons light brown sugar
  • 1/4 teaspoon cinnamon
  • 2 tablespoons Premier Protein’s Bananas & Cream Protein Shake
  • 1-2 teaspoons Coconut oil

Instructions

For the pancakes

  • Place the ground up oats/oat flour in a bowl with the baking powder, baking soda, and matcha powder.
  • Add in the Premier Protein’s Bananas & Cream Protein Shake and mix well
  • Then add in the egg and mix well.
  • Let the pancake batter sit for about 5 minutes - while it's sitting, heat up your pan or griddle over a medium flame.
  • Pour 3-4 tablespoonfuls of the batter onto the heated pan/griddle.
  • Cook 3-4 minutes on one side, flip and cook 2-3 minutes on the other.
  • *stores vary so cooking times may to.

For the topping

  • Add the coconut oil and banana slices to a pan over medium heat.
  • Add in the brown sugar and cinnamon and let saute till bananas begin to caramelize.
  • Then add in the Premier Protein’s Bananas & Cream Protein Shake and stir about a minute or two.
  • Serve with Banana Matcha Oatmeal Pancakes and maple syrup.

    I have steel cut oats. Would you recommend the 1 cup still?

      Hi Jamie, I used rolled oats and am not sure how this would be with steel cut oats – I’d recommend rolled oats if possible.

    Wow, mustard and ketchup sound like a…peculiar way to enjoy your pancakes. When I was the kid, my favorite toppings were sweetened condensed milk (Actually, I like it these days too), sour cream, and preserves. That, indeed, were the most available things in Russia those years. I’ve grown and so have my palate 🙂 I can go as with sweet toppings like maple syrup, dulce de leche (perhaps, my favorite), honey, ice cream (mostly with crepes, though), and so one as with savory ones like greek yogurt, cheese, eggs, butter, etc. Lavender too, of course:) These pancakes look pretty, and I bet this combo is fabulous. Besides, the colors are pretty spectacular – this kind of green and golden look great together.

  8. Ketchup and mustard on pancakes? Whoa! That’s definitely a different combo for sure!! Avocado and parm? I think I could try that, though 🙂 I have been known to put vinegar in chili and soup on the regular. I don’t know how odd that combo is, but I do love me some vinegar. I think with pancakes, I would be more like you…on the traditional side with fruit….and some good maple syrup 🙂 I can’t believe there’s actually pancakes out there that are $200! They must be some pretty awesome pancakes, gold leaf or not, lol 😀 I would love a big stack of your pancakes right now with extra banana. They look so fluffy and absolutely delicious! I seriously feel like it’s an understatement to call such a beautiful stack of food art mere pancakes… 😉 Meanwhile, however anyone chooses to top these babies–whether with mustard, cheese or let’s say… poundcake crumbs (!!)–they’re sure to be a delight! You know, come to think of it, your daughter would totally love savory pancakes! Now before I go off on a huge tangent about those, let’s get back to these amazing works of art.   13. Okay, and I though I had weird topping preferences! Seriously, my husband makes fun of me for dipping a cream cheese topped english muffin in ketchup. 🙂 BUT, your daughter has me beat!!! Ketchup and mustard or parmesan on pancakes?! I can’t judge, because I’d probably really like it! hahaha. Anyways, one think I know FOR A FACT that I will LOVE are these pancakes!   15. Haha! Lil Shashi does indeed have some oddball flavor choices in pancakes. I mean ketchup and mustard? But I can totally see the smashed avocado version…that sounds awesome! But I will stick to the more ‘traditional’ flavors, and I’m all about these banana matcha pancakes. They sound (and look) delicious, Shashi!
