So, what would you do if you won the lottery?

Let’s day dream for a little now…

Would you quit your job?
Buy a new home? A new car?
Travel the world?
Sit around and eat beetroot in all it’s glorious forms: all-day? everyday?  😉

When we were younger, my dad used to love to ask my sister and I what we would do if we won…

Then when it was his turn, he would rattle off all the things we had listed – saying his answer lay in helping us get what we wanted and be where we longed to be…

In those earlier years, my day dreams revolved around a new car, a home for my parents, travelling to see my friends and family scattered around 4 continents…these days though, my answer to that question isn’t quite the same…these days my answers revolve more around my daughter’s needs and my mom’s and sister wish-fors.

But, there is one thing constant – one thing that I had wanted to do when my dad first asked me this question and now, as I ruminate on it myself-and that would be to quit my full time gig.

So last night when I came across this amazing lady – who won $11 million in a lottery with her husband – and heard of her plans to stay working and serving at her job – well, to say my mind was blown is putting it mildly!

So, I might quit my day job, but I think I will keep my night one – this blogging thingie – after all it’s an excuse to eat glorious beetroot in a smorgasbord of ways!

I tried a couple of versions of these beet bars – the first one, I did not use enough agave and it seemed that the salt was kinda off (like how technical I can get in my descriptions?) and my daughter gave me her “squinchy” face at first bite -YIKES! But the second time around, I used raw cane sugar and more salt and more chocolate chips and peanut butter chips (which can be substituted with butterscotch chips – if you prefer)…

And…I had to start rationing…while negotiating…

My daughter (while I was trying to take these pictures and when she knew I would be distracted): “Mom – can I have another one”…
Me: “can or may…”
My Daughter: eye-roll (Whhaaat!!! Why do kids think just because you have your back to them, you have no clue what their body language is saying???)
Me: “You’ve had two – we need to save them for breakfast for the rest of the week”
My daughter: “How bout I help you weed the front yard?”
Me: “What does that have to do with the amount of leftovers we have?”
My daughter: “that will cut the time you spend on yard work in half, leaving you more time to go buy more beets and make another batch of these…”

And that’s when I didn’t have a come back as I was marveling at her application of math to real life and the fact that she was trying to talk me into buying more beets!

These Beet Bars are totally gluten free and can be enjoyed as a breakfast treat or a snack or a dessert (or like my daughter tried to tell me) at breakfast, and as a snack and as a dessert – all in one day!

Moist, light, and studded with white chocolate chips, these decadent Beet Bars are gluten free and can be enjoyed as a breakfast treat or a snack or a dessert.

Ingredients

  • 1 1/2 cup Beet Puree:
  • 3 medium beets roasted and cubed for about an hour at 400 degrees
  • 1/2 cup almond milk
  • 4 eggs at room temperature
  • 1/2 cup coconut oil -melted
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1/2 cup raw cane sugar
  • 1/2 cup melted white chocolate
  • 2 teaspoons baking powder
  • 2 tablespoons flax meal
  • 1 cup rice flour
  • 1/2 cup white chocolate chips
  • 1/2 cup peanut butter chips or butterscotch

Instructions

  • Preheat oven to 375 degrees
  • Make the beet puree by blending the beets and the almond milk
  • To this, add the eggs and using a whisk, mix the eggs till well incorporated
  • Add the coconut oil and mix well
  • Add the melted white chocolate and whisk till well blended
  • Then add the cane sugar, vanilla, baking powder, flax, salt and rice flour.
  • Sprinkle the white chocolate chips and peanut butter chips/butterscotch on top
  • Bake at 375 for 28-30 minutes
  • Let cool completely and then divide into pieces.

    Hahaha! I love that your daughter was trying to convince you to let her eat more beets. That’s impressive, Shashi! If I won the lottery, I would definitely want to do some more traveling. I’d probably also want to move down to the NC mountains. I love mountains and chilly weather, but it’s just too darned cold way up here in NY. I’d definitely still keep blogging, though. I love having a reason to make all sorts of new recipes, and I love all the awesome people I’ve met, too. (ahem, like you!)

      David – you won’t believe what she did tonight – she was writing down a grocery list and she put down beets and underlined them!!! Yes!!! All those years of stuffing disguised beets down her throat have paid off!!! Parental food victories are the best!!!

    Funny, recently I met with a lady who had been hounding me and I thought it was about a business thing. Nope – it was a pyramid scheme. Her opening line was, “What would you do if a relative died and left you $1 million?” I told her that other than setting aside money for the boys, paying off our mortgage and business loan, and buying my beach house – nothing would change. I actually like my life the way it is right now – obviously some days aren’t great but overall it is pretty great:)

    One, these bars are so cool. The color … the different-ness (not a word but I’m going with it!) … and they sound delicious!

  25. I love the story of your dad, that was so sweet! I think the majority of people would quit their day job (I might still work sporadically but not full time!) so that woman is the minority. However, blogging is more of a fun job that I actually enjoy. Especially when you can come out with treats like this! These are beautiful and SO unique. I love them!!

      Mike, I think we need to add a discussion on “I” vs “me” – I am always correcting my daughter when she says “me and Maddie laughed so hard today..” but she argues that it’s not a grammatical error … that “Maddie and I..” is just weird!! Whaattt????

Your daughter is very wise for her age and I would go weed both the front and back yard if you made another batch of these lovely gluten free treats.     I’ve never really thought about what I’d do if I won the lottery. I suppose one would have to actually have to have an entry into the lottery. I never thought my chances would be all that good. Maybe I’ll buy a ticket in your honor, just to test the waters.

      I rarely play either – but since my dad passed last month I have tried to play it at least once every 2/3 weeks – my dad gave me a little post-it about a year or so ago with his selected numbers (he would always think hard before he asked me to play his numbers) and -in honor of him – I play his same numbers every now and then.
