We eat A LOT of leftovers in our house!

But, on those days when there are no leftovers – left over…

There’s usually some cooked lentils hiding in the back of my fridge…

Or, there’s usually a container of cooked quinoa peeking around the container of rationed beet bars

Or, there’s usually a giant bag of broccoli filling up my vegetable tray…

And a “hair-pulling-nothing-is-whats-for-dinner” crisis is averted! And all’s well!

But…then…

There are those days when our fridge looks like we are training for The REAL Hunger Games and other than onions, garlic, ginger, a lonely red bell pepper and a bunch of asparagus – we’ve got zilch! And usually – this gal has gotta get some protein!

It’s on days like this that I am so glad to have a bag or 5 of Beyond Meat stashed in my freezer – along with a variety of “for-emergencies-frozen-veggies”. Which have the makings of a quick and easy stir fry all over them!

Beyond Meat is a line of “meats” made from plants – from Non-GMO ingredients such as Soy Protein, Pea Protein and Amaranth, to be specific. Oh – and a serving has about 20g of protein! The Lightly Seasoned Chicken Strips I used in this quick and easy stir fry, did not taste exactly like chicken – which worked just fine for me. I thought it had a texture somewhere in between extra firm tofu and chicken – but was not completely flavor less like tofu is known to be. It did absorb some of the flavorings of the garlic and ginger, but it also retained some of it’s own taste.

I was able to stir and fry the veggies and chicken-free chicken into a concoction that left my picky-always-hungry-teen daughter satisfied and full in less than 30 minutes – and she even cleaned her plate – with her tongue! At least she did it over the sink and not at the table! And seeing she gave me a thumbs up for dinner – I think I will let her lack of manners slide…

Beyond meat quick and easy stir fry

Veggie & “Beyond Chicken” Stir Fry!

Ingredients

  • 1 onion chopped
  • 1 inch piece of ginger finely chopped
  • 4 cloves of garlic chopped
  • 1/2 cup frozen corn, or fresh or canned
  • 1 bunch asparagus chopped into bite size pieces
  • 1 red bell pepper also chopped into bite size pieces
  • 1 package Beyond Meat Lightly Seasoned Chicken-less Chicken Strips
  • Juice of half a lemon
  • olive oil
  • 1/2 teaspoon chili powder, optional
  • salt and pepper to taste

Instructions

  1. Saute onion, garlic and ginger in olive oil in a pan on a low-medium flame for about 15 minutes
  2. Add the corn, asparagus, red bell pepper, Beyond Meat Lightly Seasoned Chicken-less Chicken Strips, chili powder and lemon and salt and pepper and gently stir till combined - let all ingredients mingle over a low-medium flame for another 10 minutes or so and voila - dinner is ready!
