When my daughter was around 5 years old, (and heavily into Harry Potter), we decided to head east to Abu Dhabi to visit my parents. Back then, my mom and dad hadn’t joined us here in Atlanta yet and we decided instead of them coming to see us like they often did, we would go visit them.

Now, Abu Dhabi is quite a bit different from Atlanta culturally – and I painstakingly explained to my daughter that quite a few people dressed differently there. I used drawings to explain the “dishdāshah” or “thobe” that was worn by a lot of the men there, but I clean forgot to tell her about the head-to-toe black “burka” a lot of the women wore.

Well, after we landed and passed through customs, we came across a group of ladies who were in “burkas” and my daughter took one look at them, and yelled “mommy dementors!” – then she proceeded from then on to be obsessed with finding herself a burka that fit – guess you know she was team-dementor from then on! I finally found her one made with silk – and she wore that till it didn’t feel like silk anymore!

Speaking of silk … the other Silk popped into my head. You know the other Silk® as in Silk® nut milks and creamers and the like.

Silk products are a favorite in our house and recently when I was rummaging through the creamer/milk section of Walmart, I ran into Silk Vanilla Almond Creamer and had to bring it home to try in my morning cuppa.

Carrot Pineapple Muffins

These delicious Carrot Pineapple muffins also happen to be gluten and dairy free!

Ingredients

  • 3/4 cup oat flour I ground up rolled oats and used that
  • 1/2 cup gluten free baking flour of your choice
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 cup shredded carrot
  • 1/4 cup pineapple chopped
  • 2 eggs
  • 1/4 cup coconut oil – melted
  • 1/4 cup Silk Vanilla Almond Creamer
  • 3 tablespoons sugar
  • 1 tablespoon almond meal
  • Few almond slivers for garnish

Instructions

  • Preheat oven to 375
  • In a bowl, stir the oat flour, gluten free flour, salt, cinnamon, baking powder, sugar and almond meal together
  • Then, in another bowl, beat the eggs, coconut oil, creamer together
  • Add the wet liquids into the dry mix
  • Add in the shredded carrots and chopped pineapple
  • Using a spatula, stir ingredients together
  • Spoon into 6 muffins cups garnish with almond slivers and bake for 20 minutes

I have a muffin recipe with carrots and pineapples too. But no Silk almond milk and no almonds on top, which is SUCH a great crunchy topper.     • Oh my gawsh, your daughter is hillarious, and her and I have another thing in common – Harry potter. Except I still love those movies to this day. I also love Silk! I always have a carton of it in my fridge, so I totally need to make these muffins! Love the pineapple carrot combo! Healthy so I can devour a dozen of these for breakfast! Yay to that!!     These look so delicious. I love how muffins can be light and fluffy and taste decadent while being completely healthy. This is a great recipe!
