Mark Twain once said “part of the secret to success in life is to eat what you like…” and my daughter tries her very best to be successful everyday! She adores Italian food (way more than I do) and tries to talk me into making some sort of pasta or pizza almost nightly. But, when I eat Italian, I am still full 3 days later and that’s no good. So, we compromise. If it’s spaghetti and meatballs she wants, we have spaghetti squash and turkey balls. If it’s pizza she craves, we have beet pizza with veggies. And, if it’s lasagna she dreams about, why, we make this Cauliflower and Fava Bean Lasagna!

The other night, on our way home from running a bunch of errands, we stopped by our neighborhood Publix, and, when my daughter saw that they were having a “Viva Italia” sale, she had to do a happy dance right there in the middle of customer service!


Of course, she wanted lasagna right away! And, being the sucker of a parent I am, I said ok. Only, I suggested we put a spin on it. Instead of lasagna with noodles, I suggested lasagna with cauliflower florets as the noodles – complemented with a hearty and flavor-packed sauce with Progresso Fava Beans and Chickpeas and Hunt Tomatoes.


This recipe is quick and super easy and my daughter and I enjoyed the leftovers over the course of three days! I’m hoping you give this recipe a try – by starting off with making your bargain purchases at the Publix Viva Italia Sale! Cauliflower Fava Bean Lasagna

Total Time: 55 minutes

A veggie filled twist n traditional lasagna with a hearty bean sauce and cauliflower florets!


  • 2 tablespoons olive oil
  • 1 onion chopped
  • 3 cloves garlic chopped
  • 1 teaspoon freshly grated ginger
  • 1 can Progresso Fava Beans
  • 1 canProgresso Chickpeas
  • 1 can Hunts Tomatoes
  • 1 small head caluflower with florets chopped off
  • 3/4 cup cheese, I used mozzarella
  • cilantro to garnish


  1. Preheat oven to 375
  2. Add the onions, garlic and ginger to a saucepan with the olive oil and saute over a low flame till onion begins to caramelize - about 15 minutes - this takes a bit but the flavor is so worth it.
  3. Add the Fava beans, chickpeas, and tomatoes into this and let cook for about 5 minutes
  4. Then, arrange cauliflower florets in an oven safe dish
  5. Add spoonsfuls of sauce on top
  6. Layer more cauliflower florets on
  7. And top with sauce
  8. Then add the cheese on top and bake for 30 minutes or till cheese is bubbly
  9. Granish with cilantro if desired and enjoy warm
  10. *A french loaf would be wonderful on the side to sop up all those extra flavorful juices - and Publix has some amazing french bread as well!

Loved this dish but made some modifications... used just fava and cauliflower "steaks". Used Marinara, no ginger, added an egg and ricotta and italian herbs.. more like a real lasagna. Low carb and delish! Thanks for the idea!!
