I am not quite sure who it was who said, “get lost in nature and you will find yourself” but, to me – them there are some of the truest words ever! If you follow me on Instagram or Facebook, then you will know that my weekend shenanigans involved hiking the White Trail at Sweetwater Creek State Park with my daughter and sister. Now, my daughter and I are used to moderate to strenuous hikes with a few rocks and streams thrown along our pathway, but, to my sister, this was a hike filled with self-learning and fueled with Cereal Muffins!
On those rocky bits of our hike, I proudly watched my daughter approach just about every steep incline and slippery decline with such confidence – and it made me realize that somehow she has come to understand that no matter how tough the going maybe, it has to be approached with the same passion and gusto as those easy bits. And, if she falls down, she simply picks herself up, dusts herself off and keeps on going. My sister made the surprising comment that she is constantly having to work on her confidence. To me, my sister is the confident one, between the two of us…but on the trail, she had to convince herself that certain parts of it were not as bad as she thought they were.
Similarly, when she took one look at these muffins, she gave me a quizzical look and had to remark about their odd coloring. But then
I bribed her to try one she convinced herself to try one and was surprised at how good they tasted! Not too sweet – not too dense – just perfectly moist and filling! These muffins are super easy to make and they helped us enjoy #CerealAnytime 🙂
These muffins are pretty versatile – you can use whatever cereal you prefer and whatever flour you have on hand. I used a gluten free flour mix as I forgot to pick up any other options when I went to my neighborhood Walmart to pick up packages of Honey Bunches of Oats Crunch O’s and Berry Colossal Crunch cereal. I roughly hand-ground the cereal with a rolling pin and used it with 7 other ingredients to make these muffins.
As a child, cereal for breakfast wasn’t the norm for me – but as an adult, cereal muffins are a favorite, on-the-go travel snack for hiking and errand-running!

Happy Monday Y’all, so I was wondering how do y’all make your favorite Post Cereal more portable?
- 1 egg at room temperature
- 1/4 cup coconut oil melted
- 1/4 cup honey
- 3/4 cup milk of your choice at room temperature I used Lactose-free
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 cups Berry Colossal Crunch cereal roughly ground up in a plastic bag with a rolling pin
- 1 cup flour of your choice I used gluten free as that's all I had
- Pre-heat the oven to 350 degrees
- Mix the wet ingredients - the egg, coconut oil, honey and milk in a bowl and set aside
- In a separate bowl, mix the baking powder, salt, flour and ground up cereal
- Add the wet mix to the dry flour/cereal mix
- Place spoonfuls into a lined muffin tray
- Bake for 20-22 minutes
