Tonight, as temperatures drop and Atlanta prepares for it’s second rendezvous with snow,
I figured I would heat things up a bit in my kitchen.
After all – nothing like some heart warming curry to tingle the taste buds and warm the soul.
Specially when it’s laced with some Roots Thai Coconut Curry Hummus!


You must be thinking “Hummus in curry”??? Whaaaaaaaaaaaaat????
You must be thinking this is a bit weird…
Yes – yes it is…
It. Was. Just. So. Good!
The hummus mixed in with coconut milk, made for one heck of a creamy curry.

With garlic, onions, ginger and turmeric packing a powerful nutrition punch and sweat potatoes and green peppers rounding off the flavors, this curry turned out better than I expected – with rice or naan, it is definitely a must try!

Growing up in Sri Lanka passion fruit was abundant and one of my favs – and since I laid my eyes on this Passion fruit Chobani – I have been hooked!

Chicken Curry with Thai Coconut Hummus


  • 1 onion
  • 4 cloves garlic
  • 1 inch piece of ginger
  • 1 inch piece of turmeric
  • 1 sweet potato chopped/cubed
  • 1 green pepper chopped
  • 2 free range, grass fed chicken breasts cubed
  • 1 teaspoon cumin
  • 2 teaspoons paprika
  • 3 tablespoons Roots Thai Coconut Curry Hummus
  • 1 cup coconut milk
  • Salt and Pepper to taste
  • Parsley and chili pepper flakes to garnish


  1. Saute onions till golden - about 15 minutes
  2. Add the ginger, garlic, turmeric, sweet potato and cook till sweet potato is tender (about 10 minutes)
  3. Push the vegetables to the side and cook the chicken in the same pan
  4. Add the green pepper and stir in the cumin, paprika, salt and pepper, coconut milk and hummus and let cook for 5-7 minutes.
  5. Garnish with parsley and chili flakes and revel in its deliciousness!

Hi Shashi, our favourite curry is a simple chicken with mixed dal curry. I can see where the sauce has come from. Looks like I'll have to give it ago to keep away from the takeaway.

My mom makes a heavenly chicken and dal curry! Using the basics, my curry doesn't taste as good as hers, so thats why I get creative - like with this hummus :) Sure hope you do get to try it - would love to know what you think if you did.
