While 18-year-old-me didn’t experience a culture shock when I first came to the United States, I sure did go through a major food-shock! Y’all, my little world was shaken to its core when I came face to face with biscuits that were “light and fluffy” NOT “crispy and sweet!” And, they were called “cookies” but were baked and NOT cooked! I mean, why were they not called “bakies?”
What ended up helping me sort out my mind-boggling cookies vs biscuits conundrum, was when a collegemate shared a pack of Keebler Chocolate Chip Cookies with me! But, that wasn’t all those cookies helped with. They also went on to help me with my all-night-cram-sessions as well as balancing off the tofu I was ingesting! Life is all about balance, right?
As time went by and life happened, I set my Keebler 3C’s habit aside – till my daughter came around, and what’s old became cool again! As she is an only child, she has never quite mastered the art of sharing, so, I have had to come up with creative ways in making Keebler cookies last when they came into our home.
Recently we were at our neighborhood Kroger and I came across Keebler Chips Deluxe Cookies with coconut! As I adore all things coconut, I figured these were cookies I would have to trick my daughter into sharing! And I figured what better way to get her to share them than by adding them to our Saturday brunch pancakes for a truly decadent, morning treat!
Recently I have been using this pancake recipe that results in some pretty fluffy yet gluten free pancakes spiced with cinnamon, ginger and coconut flakes. But, this weekend demanded lessons on sharing and a little decadent treat to start the day off. So, this past Saturday, our brunch pancakes had some chocolate chips and Keebler Chips Deluxe Cookies with coconut in them! Life is about balance, right?
- 1 cup gluten free flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ginger
- 2 tablespoons coconut flakes
- 3/4 cup dairy free milk
- 2 tablespoons white vinegar
- 1 egg
- 2 tablespoons coconut oil melted
- 1/2 cup chocolate chips
- 3-4 Keebler Chips Deluxe Coconut Cookies crumbled
In a large bowl, stir together the gluten free flour, sugar, baking powder, baking soda, salt, cinnamon, ginger, and coconut flakes.
Then add in the dairy free milk, white vinegar, eg and melted coconut oil and mix well with a spoon
Add in the chocolate chip cookies and Keebler Chips Deluxe Coconut Cookies
Add 3 tablespoons of mix onto a greased pan over medium-low heat and cook 3-4 minutes on each side before flipping
Repeat till mix is finished
Serve with melted chocolate drizzled on top and whipped coconut cream!
