Last year my sister tried to convince me of the health benefits of dried plums when she came to spend a weekend with us, here in Atlanta. It was just after our father had passed; his long battle with heart disease had convinced her to ditch her meals of chips and salsa and make healthier choices. And, California Dried Plums were part of her healthier eating. She even tried to force me to imbibe in these naturally sweet, convenient and nutrient-dense snacks! The Nerve! When she couldn’t pry my mouth open, she started spewing on about how research suggested that dried plums support healthy bones and healthy aging, and may even support heart and digestive health, as well as pump up our immunity…but, I wasn’t convinced!
You see, those dried plums were referred to as “gut-busting prunes” by my grandmother; and, since I’ve never been a fan of ex-lax and it’s side effects; I avoided dried plums/prunes for the longest time. Then, at the end of my sister’s short stay, she went back to Dallas leaving a package of dried plums in my mom’s fridge – which my mom pawned off on me. I must say, that package of dried plums stayed in the back of my fridge for a long, long while.
Then one day (as fate may have it), I happened to be out of dates for my after-run snack of dates-bananas-peanut butter; and, so, I gingerly reached for a prune – and ate it with a slice of banana and some peanut butter – and, well, I guess you know where this is going…
Of course I loved them and snacking on California Dried Plums lead to baking with them and that’s how these little Coffee Cashew Breakfast Cookies happened. After an epic fail (evidence captured on Instagram), these soft baked cookies were quite enticing. These are pretty easy to whip together and can really be eaten anytime of the day – these little chaps also happen to be gluten free. They are not too sweet, but, they are super moist – thanks to the pulverized California Dried Plums in them.
