But, when it comes to new gadgets and gizmos, I need help!
Of course, I have issues admitting I need help…so, I take off my rose colored glasses and put on my MacGyver ones – not realizing that the MacGyver ones work only for MacGyver!

In my early college years, I found myself face to face with a charcoal grill.
Somewhere along the line, I had volunteered to “woo-man” the grill at a get-together – but, the only problem was, before that day, I had never, ever, ever, used one!

Of course, I wasn’t going to admit this to anyone.

I managed to open the lid, and, I knew that lit charcoal had to be placed somewhere in it. Seeing that there were two surfaces, I figured one was for the charcoal and the other was for the meat (of course, back then I didn’t realize that they were two cooking surfaces). I set about to place the charcoal on the lower surface and lit it, and before it really got hot, I threw the meat on the top surface and closed the lid and started chatting with a friend! Well, about an hour later, when everyone started getting hungry, I went to the grill to find that the charcoal was cold and the meat was raw!

Thankfully back then I had some veggie burgers in my dorm apartment, so I ran upstairs and zapped them in the microwave and brought them down and lunch was served and no one complained.

Curried 4 Bean Salad

This past month has been incredibly busy for my daughter and I. And, on those evenings when all I want is a quick and easy dinner, I reach for a MorningStar Farms burger with a side – like this curried 4 bean salad. Topped off with an egg – it is comfort cuisine for us!

Beans

This Curried 4-bean salad came together in 4 easy steps:
1- Chop up an onion, an orange bell pepper and 2 cloves of garlic and toss them in a pan with some olive oil
2- Add a teaspoon of grated ginger
3- Add in 1 cup of canned (or dried and soaked) kidney beans, black beans, chickpeas, cannellini beans and green beans
4- Add in a teaspoon of cumin, paprika, salt and pepper and dried parsley and voila – done!
This can be served warm, lukewarm or even cold.

Curried 4 Bean Salad With MorningStar Burgers

A quick and easy, super flavorful 4 bean salad - wonderful warm or cold.

Ingredients

  • 1 onion
  • 2 cloves garlic
  • 1 teaspoon fresh ginger grated
  • 1 orange bell pepper
  • 3 tablespoons olive oil
  • 1 cup black beans
  • 1 cup kidney beans
  • 1 cup chickpeas
  • 1 cup cannellini beans
  • 1 cup green beans
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley
  • 1/2 teaspoon chili flakes
  • salt and pepper

Instructions

  1. Chop up the onion, the orange bell pepper and 2 cloves of garlic and toss them in a pan with some olive oil
  2. Add a teaspoon of grated ginger
  3. Add in the kidney beans, black beans, chickpeas, cannellini beans and green beans
  4. Add in a teaspoon of cumin, paprika, salt and pepper and dried parsley and voila - done!
  5. This can be served warm, lukewarm or even cold.
  6. Can be served in a bowl, with a MorningStar Burger and topped with an egg!

Now this is some huge amount of proteins in one salad, Shashi! Love this stuff, as you might know ;-) I'd also love to try those patties, but over here in Germany it's a little difficult!
