In the busy month of December, it’s a rare and treasured Saturday morning in our house when my daughter and I have no plans!

On those rare Saturdays, we usually pack a backpack with snacks and get ready to head out for a long hike. But, somewhere between getting the tinsel off the dogs leashes and turning over piles of cards to find the keys and setting the navigational system to avoid holiday traffic, we manage to forget about our snack-filled-backpack until we are halfway through our hike! 

Yikes! I know you must be wondering what do we do – right?! 

Turning around wouldn’t make sense as we are halfway through… better yet to keep on hiking… and head to Sam’s Club to fill up on samples soon after – right?!

Yes, we are those people that head to Sam’s Club to fill up on samples and samples alone but then end up heading out with a shopping cart filled with toilet paper, kitchen towels, avocados, shampoo, and soap (those deals are hard to beat). Though, during the holiday season, a 6 pack Swanson® Chicken Broth (32oz) and a 10 pack Campbell’s® Condensed Cream of Mushroom Soup (10.5 oz) indubitably get added to that shopping cart as well!

No, we don’t usually work our way through all the 6 packs of Swanson® Chicken Broth or all of the 10 cans of Campbell’s® Condensed Cream of Mushroom Soup. I like having a couple of packs of Swanson®Chicken Broth and Campbell’s® Condensed Cream of Mushroom Soup on hand to whip up quick and easy soups and stews like this Three Beans and Greens Stew during those busy nights during the holiday season.

As for the rest, we usually donate it to a local church pantry or food bank. This Easy Three Beans and Greens Stew is a semi-homemade soup that uses a mix of canned soups and veggies for a delicious and creamy soup perfect for a busy night when you want a quick and filling dinner.

Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 yellow onion
  • 3 cloves garlic
  • 2 tsp fresh ginger
  • 1 10.5 oz can Campbell’s® Condensed Cream of Mushroom Soup
  • 3 cups Swanson® Chicken Broth
  • 2 tsp smoked paprika
  • 3/4 tsp turmeric
  • 1 15 oz can chickpeas
  • 1 15 oz can pinto beans
  • 1 15 oz can black beans
  • 1 cup spinach or kale cut up
  • green onions and roasted chestnuts to garnish.

Instructions

  • Add olive oil to a pan and when slightly warm, add in the onions and saute for about 10 minutes, stirring often.
  • Then add in the garlic and ginger as well as Campbell's® Condensed Cream of Mushroom Soup, Swanson® Chicken Broth, paprika, and turmeric and stir till well combined.
  • Add in the 3 beans and spinach and let cook for about 3 minutes. Serve warm, garnished with green onions and chestnuts.
