Easy Orange Ginger Loaf

Like that chap from that movie who used to put Windex on everything, my mom believes that ginger is the solution to all problems. If we’ve got stomach woes, she tries to get us to eat ginger. If we are breaking out, she tries to convince us to drink ginger tea. If we complain about each other’s bad breath, she’s trying to force raw ginger down our throats…though, ginger breath is pretty ridic itself! The same goes for if we are feeling under the weather.
Speaking of feeling under the weather, have you noticed how as soon as a major event comes to pass (no matter if said major event was joyous or stressful) you tend to fall sick? Or, is that just me? During my move and even after, through all the unpacking, I felt like I was riding on an adrenaline wave! Then, as soon as the dust settled on the unpacked boxes, the sniffles started creeping in. And, o add to it, we are smack dab in the middle of germ season too!

Now, getting back to this Orange Ginger Loaf, it is really so easy to make, with only 8 ingredients – which you probably already have lying around. It uses olive oil instead of butter and fresh orange juice instead of milk. Stiffly beaten egg whites make it light and airy, and ginger adds in just another level of flavor. Also, it keeps my mom happy to know ginger is involved!

Ginger and Orange unite in this delightfully delicious, butter-free, loaf-cake!

Ingredients

  • 1 1/2 cups all purpose flour
  • 3/4 cup sugar
  • 1/2 tsp salt
  • 2 tsps baking powder
  • 1/2 cup olive oil
  • 1/2 cup orange juice + 1/2 tsp orange zest
  • 1 tsp freshly grated ginger
  • 4 egg whites

Instructions

  1. Preheat oven to 350 degrees.
  2. Add flour, sugar, baking powder, and salt to a bowl and mix with a spatula.
  3. Then pour in the orange juice, olive oil, orange zest and ginger and mix with the spatula.
  4. Then, using a handheld mixer, beat the egg whites till they are stiff. Using the same spatula, fold the egg whites into the orange ginger loaf batter gently and until well incorporated. Pour dough into a parchment lined loaf pan and bake for 1 hour. Your Kitchen will smell heavenly - but resist the urge to open the oven till the hour is up. Let come to room temperature and enjoy as is or with whipped cream and fruit.

I do agree with your Mom that ginger is good for many things, My mom would always tell me to fry some ginger along with some garlic, onion, and ghee. And guess what? it used to be a very effective remedy for a cough. I always prefer to have strong ginger tea, whenever I am down with cold. But you know what, my daughter is totally opposite to me. She just doesn't like ginger. In fact, if I cook something by adding ginger to it. She doesn't prefer to eat that. BTW the orange ginger loaf sounds tasty... thanks for sharing.... Pinned :)

Haha! Ginger is pretty amazing...though, I wauldn't want to eat it raw! I remember several years ago we moved and it was literally right before Christmas. Hubby lost weight and I got a cold. It was rough trying to get everything done. We didn't even have our tree decorated that year, but at least we were moved in, lol. I love orange in baked goods and paired with ginger, I bet it is AMAZING!! And sooooo much better than raw ginger, lol. Stay warm and well, my friend! XOXO
