It’s been one of those topsy turvy weeks for me…
I’ve been making breakfast for dinner about as many times as I have been making breakfast for breakfast…
I’ve been working out when the sun went down instead of when it came up…
And…it all started last Saturday when I took a tumble off an 8 foot ladder.

Yup, I tumbled – a tumble worthy of a guffaw if it had aired on America’s Funniest Home Videos.
But, that tumble taught me a thing or two about myself.

For one, not to toot my own horn, but I’ve gotta be the clumsiest person I know. Yes, THE clumsiest!
And…second, I didn’t think it was possible, but, apparently, I can still do a back-flip!

Of course, I had quite a bit of assistance from the top rungs of that ladder and the back of my couch…
But, I nailed the landing – and landed perfectly …on my head!
Ahh…yes.. admit it – you’ve a bit jelly, right?!

Seriously, I’m fine now. I was bumped up but nothing serious. 
However, that little mishap kinda tumbled up my week.
It threw a wrench in my dinner plans and I ended up giving my waffle iron a workout with a variety of quick and easy waffle recipes.

Some days, I threw in beet puree I found in the back of my fridge and other days I threw in sweet potatoes. So…technically… we ate our veggies, only they were in waffle form!

One night I decided to throw in some Simply Sesame Spread I had leftover after making these Chocolate Dipped Sesame Cookies, and… y’all, the slightly tangy almond sesame spread balanced out the sweet potatoes so well that my daughter insisted the resulting waffles were worthy of sharing, so here they are! By the way, this is not a sponsored post, I just simply enjoyed using Simply Sesame Spread.

Easy Sesame Sweet Potato Waffles

These Sesame Sweet Potato Waffles consist of six ingredients:
1) Sweet potato,
2) Simply Sesame Spread
3) Eggs,
4) Tapioca flour,
5) Baking powder,
6) And, almond extract.

They are full of good-for-you ingredients and made one heck of a tasty weeknight dinner – and, am betting, they will make one heck of a weekend breakfast too!
I like my waffles with jam and some sort of nondairy whipped topping – but my daughter thinks am a total oddball for not eating waffles the way they were intended to be eaten …and, that is with an Eiffel-Tower-sized-squirt of whipped cream on them!

I’m hoping I managed to convince you to give this recipe a try or, at least to add some veggies to your waffles.
I’m also hoping I managed to talk you out of attempting a back flip off a ladder- they are so overrated!  😆

Wanna wafflize your weekend with these super simple, gluten free, goodness-full, Sesame Sweet Potato Waffles?

Ingredients

  • 1/2 cup baked sweet potato though boiled works well too
  • 1/2 cup tapioca flour
  • 2 eggs
  • 1 teaspoon baking powder
  • 3 tablespoons Simply Sesame Almond Vanilla Spread
  • 1/2 teaspoon almond extract

Instructions

  • Place all ingredients in a bowl and mix well - using a spoon or whisk.
  • Heat a waffle iron and pour batter in and cook till done.
  • **If you like your waffles more crispy than fluffy, then, heat up your oven to 350 degrees and pop them in for about 5 minutes or so.

      Hello Louise, I have not tried preparing this recipe as pancakes so I couldn’t say for sure. However, I might try in the future and will post on here.

    A fall and a back flip – bet that was a sight to see. Glad your injuries weren’t bad because it sounds like they could have been. Lucky lady! Thanks for sharing this waffle recipe. I always have a little bit of leftovers when I make mashed sweet potato and these waffles are a super what to use them!

  3. SHASHI – girlfriend!!!! You landed on your head this past week???? I’m so sorry my friend. That is terrible. I’m so glad you are ok. You know about my brother’s terrible accident off a ladder about a year and a half ago. That was a real nightmare, a 16′ ladder and not as good a result as your ladder tumble. One of my BFF’s kids (she has 9) fell off the top of her bunkbed onto the wooden floor onto her HEAD this past week in the middle of the night. What a terrible way to wake up. She got a bad concussion and now she has a black eye. But thank God she is ok too. We were very worried about a brain bleed, my son Jacob had a terrible fall when he was 6 and had to have brain surgery. That is quite a story. Thank God he is ok too. So many guardian angels working overtime. I’m so glad yours was ON DUTY this past week. The waffles look wonderful and we are on school vacation around here this coming week. So maybe I will be making your waffles. We had super warm weather here over the weekend – nice for the open house but now it’s back to the frigid again. Waffles will be very welcome.   7. Oh no! A tumble off the ladder? Shashi! Ladders are for climbing, not doing backflips! 🙂 I’m seriously glad you aren’t injured, though…that could have been much worse. But I do think you might need to go to the doctor to get your head checked out. It sounds like you’re all confused this week. I mean breakfast for dinner? Wait. I love breakfast for dinner. I should go jump off a ladder today apparently! These waffles sound (and look) incredible! I just wish I had a nice stack sitting right here with my morning coffee. Yum! Believe me, I have had my share of falls that I would rather forget about so I try to be a little more cautious these days. I love breakfast for dinner! And these waffles with 6 ingredients?       Haha – Waffles are easy – just mix up the batter and throw it in a wafflemaker – not technically “cooking” right? 🙂
