How we enjoyed creamy Häagen-Dazs® Non-Dairy ice creams:
My daughter and I indulged in quite a few containers of creamy Häagen-Dazs® Non-Dairy flavors which I picked up at Food Lion. (You can load this coupon to your Ahold card for $.75 off your purchase!) While we loved to take a moment in the evening while we caught up on our latest episode of Code Black, to indulge in a few spoonfuls of this creamy, non-dairy treat, we also thoroughly indulged our taste buds in Flourless Peanut Butter Chocolate Cookie Ice Cream Sandwiches.
I used one of our go-to Flourless Peanut Butter Chocolate Cookie recipes. This recipe has been inspired by many of those flourless peanut butter chocolate chip cookies navigating the internet. I like to bake these only for 10 minutes so they are still soft, so I usually add in a bit of oat flour (ground up oats) to add some firmness to the cookies. While the ratio of peanut butter to sugar is 1:1, I usually use way less sugar so the cookies and Häagen-Dazs® Non-Dairy ice cream flavor I am using, balance each other out.
This recipe makes about 14 large cookies. Which would make 7 large Peanut Butter Chocolate Cookie Ice Cream Sandwiches. Now, I ended up dipping some of these treats in melted milk, dark and white chocolate – but that is totally optional.
You could enjoy one of these creamy and indulgent Peanut Butter Chocolate Cookie Ice Cream Sandwiches when you make them. And, you can wrap the rest up in plastic wrap, place them in an airtight container and save them for another day, in your freezer. When you are ready to take a break and enjoy a moment, simply unwrap, let these Peanut Butter Chocolate Cookie Ice Cream Sandwiches thaw out for about 3-5 minutes and enjoy!
Flourless Peanut Butter Chocolate Cookies are transformed into decadent Ice Cream Sandwiches, sandwiching Haagen Dazs Non Dairy Ice Creams and being dipped into a variety of chocolate dips!
- 2 cups peanut butter
- 1 ¾ cup brown sugar
- 2 eggs
- ¼ cup oat flour
- 1 cup semi sweet chocolate chips/chunks
- 14 Peanut Butter Chocolate Cookie Ice Cream Sandwiches
- Häagen-Dazs® Non-Dairy Chocolate Salted Fudge Truffle
- Häagen-Dazs® Non-Dairy Peanut Butter Chocolate Fudge
- Häagen-Dazs® Non-Dairy Coconut Caramel
- ¼ cup White chocolate chips optional
- ¼ cup Milk chocolate chips optional
- ¼ cup Dark chocolate chips optional
Place peanut butter, brown sugar, eggs, and oat flour in a bowl and mix well until dough doesn’t stick to the bowl.
Add in semi sweet chocolate chips/chunks and mix well.
Form into 14 balls.
Place balls on a parchment lined baking tray and bake at 375 degrees for 10 minutes for soft or 15-18 minutes for firmer cookies.
When done, let cool before making ice cream sandwiches.
Place scoops of Häagen-Dazs® Non-Dairy Chocolate Salted Fudge Truffle, Häagen-Dazs® Non-Dairy Peanut Butter Chocolate Fudge, and Häagen-Dazs® Non-Dairy Coconut Caramel on 7 of the cookies. Cover with the other 7 cookies.
Place White chocolate chips, Milk chocolate chips and Dark chocolate chips in separate microwave safe bowls and microwave in 30 second intervals, until chocolate is melted (took me 2, 30 second intervals and mixing between each interval to get the chocolate melty). Dip half the ice cream sandwich into melted chocolate and set on plastic until set and enjoy!
*Can be wrapped in plastic, placed in an airtight container and stored in the freezer for up to 10 days.
