Comforting, quick and oh so easy, this ginger spiced, Sweet Potato and Egg bake is a no brainer for those busy breakfasts or dinners!
Spring sprung here in Atlanta this past Sunday, with lows in the high 30s F (3 C); but, I am gonna fleece my way through this temporary cold spell with a smile on my face. You are probably going to want to throw something at me for sharing this next bit – but, I am one of those annoying few that actually enjoys daylight savings time when we spring back. Yes, I loose an hour of sleep, but I gain an hour of SUN!
And, with weeds running rampant in my yard faster than my dog running after squirrels, I need all the sunlight hours I can get to get this yard under control! But all that weeding and outdoorsy-time can leave a gal with not a whole lot of time to cook with. So, for those busy nights (and sometimes, hectic mornings), I have this tried and taste-tested, Gingered Sweet Potato Egg Bake that I turn to quite often. It has been a taste-bud pleaser and mind-soother – every time!

So, when The Recipe Redux challenged it’s members to share a “seven-ingredient-or-less recipe” that is a “healthy, no-brainer dish,” this month, I figured I had to share this Gingered Sweet Potato Egg Bake! This recipe calls for a couple of sweet potatoes (more if you are ravenous), olive oil, couple spoons of shredded fresh ginger, smoked paprika, cilantro and eggs. The only prep is peeling the potatoes, then they get tossed in some olive oil and placed in a hot oven and the oven works its magic! Now – about 20 minutes into baking, I take out the pan, make some “wells” and drop some eggs into these “wells”, spice up the whole lot, and bake it all for another 10 minutes.
Sometimes the best “fast-food” can come out of your oven – don’t believe me? Then you gotta give this a try…
