Apple Almond Bars

My house is currently on the market and I’m trying so hard to keep my kitchen clean. I gotta admit, I didn’t think I would be fighting so hard to keep from scratching the itch to bake ALL the things! Y’all, I long to cover my counters in flour and coconut oil and bake up a trays of Chocolate Pecan Cookies AND Apple Almond Bars in my recently-scrubbed down oven and let the smells of chocolate and almond extract overtake the fumes of oven-cleaner! Baking, like running, is zennifying for me. And, between house-showings and house-hunting and work and school – I’m in search of all the zen I can find!

Gluten Free Apple Almond Bars

The last time I baked was last weekend when I baked a tray of Gluten Free Chocolate Pecan Bars (recipe coming soon) and a tray of these Gluten Free Apple Almond Bars With Caramel Drizzle, because caramel + chocolate were meant to be together like flour and kitchen countertopsright? I baked these goodies up for my daughter who is off at college, leaving me an empty-nester Monday through Friday. Instead of sending her a care package, I had these boxed up as part of a care package for her to take with her as she has been coming home every weekend since college began. I wish I could say I was just baking for her out of the goodness of my heart, but, y’all, baking is zennifying for me – in fact, now Psychologists have found that baking for others makes the baker feel as good as the recipients!

Gluten Free Apple Almond Bars With Caramel Drizzle

For these Gluten Free Apple Almond Bars I used a combination of Bob’s Red Mill gluten free 1-1 flour, and Bob’s Red Mill almond flour. Bob’s Red Mill flours are milled from premium quality ingredients, giving baked goods that extra touch of quality.

I whipped these bars up in my blender and folded in a handful of apple chips, almonds and plenty of almond extract at the end just before baking these up. These bars are so versatile – you don’t have to use apple chips and almonds, you can easily sub in pear chips or apples or pecans or whatever you fancy.

Instructions

  • Preheat oven to 350
  • Spray a 9 x 9 baking tray with oil, line it with some parchment paper and spray that lightly as well and set aside.
  • Meanwhile, place Bob's Red Mill almond flour, Bob's Red Mill gluten free 1-1 flour, medjool dates, brown sugar (optional), coconut oil, salt, eggs, baking powder in a blender and blend till well incorporated.
  • Using a spatula, fold in the apple chips, almonds, and almond extract.
  • Pour mixture into parchment lined baking tray and bake for 30 - 32 minute at 350 degrees F.

  7. I love to bake for others too Shashi. I’m always trying out my new baked on my colleagues at work and of course Lady Lynne. The only issue I have there is that Lady Lynne can get jealous if I’ve made something particularly delicious and I take it to work, for my colleagues, forgetting to leave her a slice! Ha ha!

    There bars look absolutely delicious! There were so many apple trees laden with fruit that we saw last week on our Hadrian’s Wall Path walk, I would have loved to have brought some home to cook with! 😀

  9. These bars look delicious, and sound amazing. I quite agree that baking is a great therapy, and I think that if you timed it just right with house viewings; having some of these freshly baked and smelling wonderful, would entice anyone in to some serious house consideration.

  11. I always knew that baking for others made you feel better…glad there’s now some proof behind that! So I’m loving these bars, Shashi. Not only is the apple + caramel combo perfect for the season, but they sound super easy to make. And they use Bob’s Red Mill flours…and I’m more than a little obsessed with Bob’s Red Mill! 🙂 Hang in there though the house hunting process, my friend. It’s an emotional rollercoaster for sure. I hear ya about keeping the place clean, but on the other hand you should be baking all the time…if I walked into a house and smelled these bars, it would instantly put me in a happy mood. And happy moods led to buying houses. I’m not sure if that’s a proven fact yet, but it should be. Haha!
