I cannot wait for December. Hands down, it is my favorite month! Not only is it a happening month with Christmas and New Year sandwiching one glorious week of leftovers and Netflix-marathoning for us, but it’s also the month in which my daughter was born! And, I’m all for celebrating her birthday all month long!

Brussels Sprouts are a favorite in our home. Roasted, Boiled, or burnt to a crisp (almost) we lap ’em up like they are going out of season (lucky for us, Walmart always seems to carry them in the produce section and I’m crossing my fingers this doesn’t end anytime soon). In years past, when my daughter was a meat-eater, we used to enjoy Brussels Sprouts with bacon around the holidays. But, seeing she is on year 2 as a bona fide vegetarian, I feel I must do my part and make sure there are plenty of vegetarian eats on the table during the holidays AND her birthday AND practically everyday in December (seeing it’s her birthday month and all!).

I used MorningStar Farms® Grillers® Crumbles™ in this dish, but, you could use MorningStar Farms® Chipotle Black Bean Crumbles™ as well. These would be so enjoyed as a side dish at your holiday table (MorningStar Farms® products are not only for vegetarians – y’all, they are for everyone!).

Aaaannnnnd, these Hearty Brussels Sprouts ‘n Crumbles could also be used to stuff puff pastry baskets or cups and be enjoyed as an appetizer!
I am trying to stop my procrasti-baking and procrasti-cleaning and procrasti-everything ways – so I’m trying to plan ahead for our NYE appetizer spread and I’m thinking these Hearty Brussels Sprouts ‘n Crumbles in puff pastry baskets will most definitely be on our appetizer platter!

I picked up packages of MorningStar Farms® Chipotle Black Bean Crumbles™, MorningStar Farms® Grillers® Crumbles™ and MorningStar Farms® Chik’n Strips from the frozen food section at my local Walmart.

Hearty Brussels Sprouts ‘n Crumbles – A Vegetarian Holiday Side

Prep Time: 10 minutes
Cook Time: 40 minutes
Total Time: 50 minutes

These Hearty Brussels Sprouts ‘n Crumbles with Walnuts would be a delicious vegetarian addition to your holiday table – but, they are hearty enough to be enjoyed as is, aas well 

Ingredients

  • 1 red onion chopped
  • 4 cloves garlic chopped
  • 1 tsp freshly grated ginger
  • 2 cups MorningStar Farms® Grillers® Crumbles™
  • 3 cups Brussels Sprouts sliced up
  • 1/4 cup walnuts
  • 1/4 tsp turmeric
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • olive oil

Instructions

  1. Add about 3-4 tablespoons olive oil to a pan and when warm, add in onions. Make sure the flame is low and slowly cook the onions till they begin to caramelize some (about 25 minutes or so).
  2. Then add in the frozen MorningStar Farms® Grillers® Crumbles™ and saute till they are slightly browned. Then add in the ginger and garlic and stir well.
  3. Add in the Brussels Sprouts and turmeric, smoked paprika, salt and pepper and saute about 8-10 minutes till Brussels Sprouts are slightly tender.
  4. Toss in the walnuts and saute about a minute or so and then enjoy warm or at room temperature as a holiday side.
  5. *You could also bake puff pastry baskets and then stuff them with this mixture as well to make some delicious vegetarian holiday appetizers.

Our Thanksgiving is over in Canada (we had ours in October) so now it's full steam ahead for Christmas. Loving these sprouts, Shashi! I love mine kinda burnt too (well, ya know, those yummy crispy bits). I could make a meal out of this just alone or how awesome would this also be for breakfast, piled high, with an egg on top? Oh, and lots of coffee. I'm seriously getting hungry right now and it seems that the breakfast I had isn't cutting it ;) Hope you have a fabulous Thanksgiving, my friend! XOXO
