We are in the last week of 2016 and I am standing here scratching my head, wondering where has the time gone?!
 This year seems to have gone by super fast – especially these last 3 months – or, maybe it’s just me moving super slow? Never mind, no need to answer that.

Three months ago I took up blogging full time when I was laid off from my job in advertising. I figured I would have a lot more of that elusive thing we call time on my hands as I was scaling down on the work front. I made myself to-do lists of rooms to paint and minor stuff to fix around the house between juggling blog posts. I even went and signed up to take a few classes to brush up on my web designing skills so I could branch into offering web design consulting someday.
But, before I knew it, I found myself here in the last week of 2016 – standing and scratching!

I have this enviable ability to bite off more than I can chew at times – I mean, who doesn’t like a full plate eh?!

All joking aside though, when I feel I have to make lists to keep track of my lists, when work and classes have me inundated, I try my best to reach for organic, protein packed meals that are full of flavor. Kale Butternut Squash Sauteed Salad

Kale Butternut Squash Sautéed Salad

Prep Time: 5 minutes
Cook Time: 35 minutes
Total Time: 40 minutes

This is a simple Kale and Butternut Squash Sautéed salad that relies heavily on sweet caramelized onions, garlic and ginger for flavor. This warm salad is perfect for these cold months!


  • 3 tablespoons olive oil
  • 1 red onion chopped
  • 2 cloves garlic smashed and chopped
  • 1 teaspoon freshly grated ginger
  • 3 cups kale roughly torn
  • 10 oz bag of frozen butternut squash
  • 2 stalks celery
  • salt and pepper to taste
  • parsley, black sesame seeds and pine nuts to garnish with


  1. Add olive oil and chopped onion to a pan over low/medium heat and sauté till onions are caramelized (about 20 minutes or so)
  2. Add in the garlic and ginger and sauté another 5 minutes or so
  3. Add in the frozen butternut squash and sauté till butternut squash is warm
  4. Add in the kale and sauté till kale is wilted
  5. Season with salt and pepper and garnish with parsley, black sesame seeds and pine nuts and enjoy with any Lean Cuisine entrée of your choice.

Very interested to hear about you going to web design classes Shashi!

It's great to be able to do your own web site changes and tweaks isn't it? I've been teaching myself CSS and PHP and all that sort of stuff over the last few years too.

Anyway, any recipe with Kale and as delicious as this gets my vote. And gets pinned!

Gorgeous Butternut Squash Sautéed Salad and some great new Lean Cuisine entrees too! I'm tempted by that Vermont White Cheddar Mac & Cheese! I tend to bite off more than I can chew as well. Thankful for great quick and nutritious meal ideas. Hope you are having wonderful holidays my friend! XO
