We are in the last week of 2016 and I am standing here scratching my head, wondering where has the time gone?!
This year seems to have gone by super fast – especially these last 3 months – or, maybe it’s just me moving super slow? Never mind, no need to answer that.
Three months ago I took up blogging full time when I was laid off from my job in advertising. I figured I would have a lot more of that elusive thing we call time on my hands as I was scaling down on the work front. I made myself to-do lists of rooms to paint and minor stuff to fix around the house between juggling blog posts. I even went and signed up to take a few classes to brush up on my web designing skills so I could branch into offering web design consulting someday.
But, before I knew it, I found myself here in the last week of 2016 – standing and scratching!
I have this enviable ability to bite off more than I can chew at times – I mean, who doesn’t like a full plate eh?!
I kid. I kid.
All joking aside though, when I feel I have to make lists to keep track of my lists, when work and classes have me inundated, I try my best to reach for organic, protein packed meals that are full of flavor. There are those times when I simply don’t have the time to throw together a meal that fits the bill so, during those times, I opt to throw together a quick, warm salad – like this Kale Butternut Squash Sautéed Salad, and pair it up with any one of LEAN CUISINE® Marketplace entrees from Target!

Kale Butternut Squash Sautéed Salad
- 3 tablespoons olive oil
- 1 red onion chopped
- 2 cloves garlic smashed and chopped
- 1 teaspoon freshly grated ginger
- 3 cups kale roughly torn
- 10 oz bag of frozen butternut squash
- 2 stalks celery
- salt and pepper to taste
- parsley black sesame seeds and pine nuts to garnish with
- Add olive oil and chopped onion to a pan over low/medium heat and sauté till onions are caramelized (about 20 minutes or so)
- Add in the garlic and ginger and sauté another 5 minutes or so
- Add in the frozen butternut squash and sauté till butternut squash is warm
- Add in the kale and sauté till kale is wilted
- Season with salt and pepper and garnish with parsley, black sesame seeds and pine nuts and enjoy with any Lean Cuisine entrée of your choice.
