Yikes, I just realized that Thanksgiving is less than 2 weeks away!
And, Christmas is less than 5 weeks away!
And, my daughter’s birthday is right there in the middle of those two…and I’ve done diddly-squat!
My reasoning is that I like a good challenge – if I wait right till the very last minute, I end up challenging myself to see if I can pull it all off – right?
This year, I have planned out a few cookies for holiday baking, but, other then that, nothing else is certain. I do know that between pies and birthday cakes and Sri Lankan Christmas Cakes there will be some seriously rich desserts around. So, to balance all those desserts and treats out, I figured I’d make a light and easy Lime Yogurt Custard – with siggi’s Icelandic style vanilla yogurt. When the Recipe Redux announced their challenge in collaboration with siggi’s yogurt, I figured I would enter this recipe – because I simply cannot resist a challenge!
If you happen to be looking for a yogurt that is less sweeter and made with simple ingredients, then Y’all gotta give siggi’s skyr yogurt a try. Siggi Hilmarsson came up with his version of skyr yogurt when he first moved to NYC from Iceland in 2004 and could not find a yogurt that wasn’t too sweet. Skyr happens to be a strained yogurt that has been a staple in the Icelandic diet for more than 1,000 years. Every cup of siggi’s skyr yogurt contains more protein than sugar – even the flavored ones!
Keeping in line with siggi’s philosophy, this tangy and slightly sweet Lime Yogurt Custard involves only 6 simple ingredients (eggs, siggi’s yogurt, coconut sugar, lime, vanilla and almond extracts) and the Delicata squash “boats” it’s served in. Now you could make this custard in ramekins, but, Delicate Squash seems to complement the flavors in the yogurt rather nicely – and they are simply more fun – not to mention, there’s less cleanup involved when your “bowls” are edible!

Lime Yogurt Custard In Delicata Squash Boats
- 3 eggs
- 2 siggi's skyr vanilla yogurt 5.3 oz
- 1/4 cup coconut sugar or brown sugar
- Zest of one lime
- Juice of 1/2 this lime
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 2 Delicata Squash cut in half
- Preheat oven to 325 degrees
- Add the eggs, yogurt, lime zest and juice, coconut sugar, vanilla and almond extracts to a bowl and mix well till all ingredients are well incorporated
- Spoon this lime custard into the delicate squash bowls
- decorate with bits of lime zest
- Bake for 40 minutes
- Let cool and enjoy
