Marvelous Chocolate Cake!

Happy Monday Yall!
This weekend was pretty Marvelous!
This weekend my daughter celebrated her birthday with family, friends, loads of stomach clutching laughs and SUGAR in cake and cupcake form!

This year she wanted an 8 layer chocolate cake, with 4 layers of cake and 4 layers of thick frosting…
So that’s what I set out to do…

Cake after a couple hours in the fridge to let the surround cool and harden, and before I wrote on it…

I have not watched them on TLC yet – but, one of my new years resolutions (every year) is to watch more TV…so this show will be a must 🙂

Chocolate Cake

Chocolate Cake

An Oh so sinfully rich 8 layer chocolate cake!

Ingredients

CAKE

  • 2 sticks butter
  • 2 cups dark brown sugar
  • 4 teaspoons vanilla
  • 1/2 cup cocoa powder
  • 8 ounces good quality chocolate melted - I used Ghirardelli semi sweet chips
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 21/4 cups all purpose flour
  • 1 teaspoon instant coffee
  • 21/4 cups buttermilk at room temperature

FROSTING

  • 3/4 pkg powdered sugar
  • 2 sticks butter
  • About 8 tablespoons heavy cream
  • 4 ounces melted chocolate
  • SURROUND
  • Good quality chocolate

Instructions

  1. Preheat oven to 350 degrees
  2. Beat the butter and sugar till creamy
  3. Add the eggs mix well and then add the flour, the vanilla, the coffee, the baking powder and baking soda
  4. Melt the chocolate and add its well as the cocoa to the mix
  5. Beat everything well
  6. Divide mix between 4 parchment lined baking trays and bake for 22-25 minutes
  7. Make the frosting by beating all the ingredients well and slathering on
  8. Make the surround by melting chocolate and drizzling it onto parchment paper and letting it cool - just before it cooled all the way, I placed it around the frosted cake and let it harden more in the fridge.

Thank you for not using a cake-mix! I know it sounds strange, but it irks me when people post cake "recipes", everyone lauds them for it and tells them it looks wonderful, and the first thing listed in the ingredients is "2 boxes of chocolate cake mix" :p.

Looks like a very worthy birthday creation! Lovely looking chocolate surround... I'm sure I'd have broken it somehow :p

I have never seen a more beautiful or delicious looking chocolate cake in all my life!! I am CRAVING this cake. I know it is way beyond my skill level (which is zero) but MAN I want to try. Lisa you are way too too kind - thank you! But, trust me - my cake decorating skills are not great hence the rough looking "nest" surround...and the "crinked" frosting ;) But I would love an excuse to make this cake so you are on! Iam on my way to the courthouse to file the adoption papers! ;)
