When I first stumbled on McCafé coffee, I must confess, I didn’t think it would join the ranks of staples in our home. You see, for the past several years (minus the last 3 months), I had become fiercely loyal to a certain brand of coffee. So loyal that when I went shopping at Walmart, I would buy all the packages of that coffee off the shelf! Yes – I was a coffee hoarder! But, then, 3 months or so ago – there was a coffee apocalypse! My favorite brand of coffee disappeared off store shelves EVERYWHERE! Since, coffee is to me what unleaded gas is to a car, I had to find an alternative. I drank my way through many varieties and brands and samples for a whole month, unsatisfied. Until the day I brought home a package of McCafé from my neighborhood Walmart!
That first sip of McCafé’s 100% Arabica Beans had me sold. I no longer had to hit snooze on the five alarms (placed strategically around my room) every morning as I had been doing during that coffee-trialing period! If you happen to jump out of bed when you know you have some delicious breakfast treat waiting for you; then you know how my mornings have been these last couple of months! I love my McCafé mornings – so much so that I have some in the evenings too! On those evenings when I am just so tired and my daughter asks me to go for a run with her, I drink a cup and I am good to go! As McCafé brews, it fills my kitchen with the strong, delightful, aroma and that first sip of McCafé is strong without being bitter! Sometimes, I even add it to nutritious treats, that can be enjoyed as breakfast or dessert!
Skillet cakes have become a favorite in our house – because they are just so easy and the flavor combinations are endless!
For this better-for-you Mocha Oat Skillet Cake:
• I started off by brewing a 4oz serving, using a pod of McCafé Premium roast.
• I then added 3/4 cup dark chocolate chips to the coffee (so they’d melt) and set it aside to cool down somewhat.
• Then, I melted 1/3 cup coconut oil in a skillet over a very, very low flame -removing it off the flame as soon as the coconut oil began to melt.
• I then added 2 eggs to the coconut oil, while whisking super fast.
• I then added the coffee/dark chocolate to the skillet.
• I finally added a cup of ground up oats (I used my blender to grind up some quick oats) and 2 tablespoons of brown sugar.
• And then, popped the skillet in the oven for 25 minutes (it had been preheated to 350 degrees).
I know summer might have some of you shying away from using your oven, but, this skillet can also be covered with foil and “baked” on a grill. This skillet cake is too good not to make and wholesome enough to enjoy for breakfast too, with a (hot or cold) cup of McCafé!

I was fortunate enough to attend one of these demos with my daughter where we got to enjoy the Hazelnut flavor (for the first time) with a berry shortcake put together by “Calvin”. McCafé is available in Premium bags and Coffee pods too. There was no bitter aftertaste, in fact, this was so good, it didn’t need any creamer or sugar even.
