Most times, speed fascinates me. When my daughter spews out facts about the cars reaching 261 MPH, I’m awestruck. When track races air on tv during sporting events, I cannot peel my eyes away from them. When I hear random facts at trivia night that the a Falcon can reach 190 MPH in a nose dive, I turn OFF my selective hearing!

However, there are times when speed does not fascinate me. Times like this week. Y’all, this week is going by way, way too fast! The last time I blogged, I had 6 days to go with my kiddo. Today, I’m down to 4 days! F-O-U-R days before she heads off to college. These past couple of days have not only gone by way too fast, but they have been way too busy! We have been making multiple trips to stores like Target to make sure she has everything she will need when she heads off to college, from utensils to school supplies to her favorite brand of mouthwash! And, as she will not be getting a meal plan, I have been making sure I have all the ingredients I need to throw together one dish meals and snacks like these No Bake Chocolate pistachio Bites and these No Bake Caramel Chocolate Treats for her. These No Bake Caramel Chocolate Treats are so easy to make. Seven simple ingredients thrown together and rolled up into these gluten-free, delicious little treats. I dunked some of them in while chocolate and some of them in semi sweet chocolate so she has a variety of better for her treats at her fingertips. Now if only I can get these next four days to go by in slow motion, I will be one happy mama!

Gluten Free Caramel Chocolate Treats


Caramel Chocolate Bites

No Bake Caramel Chocolate Treats

Yield: 6
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Ingredients

  • 1 cup oat flour (ground up gluten-free rolled oats)
  • 1/2 cup coconut flour
  • 1/2 cup caramel sauce
  • 1/4 cup coconut oil
  • 2 pinches salt
  • 1 tsp vanilla extract
  • 1/4 cup mini semi sweet chocolate chips

For the coating (optional):

  • 1/2 cup white chocolate - melted
  • 1/2 cup semi sweet chocolate - melted

Instructions

  1. Place the ground up gluten free oats, coconut flour, and salt in a bowl and stir a bit.
  2. Add in the caramel sauce (you can use homemade or store bought), coconut oil, vanilla extract and mini chocolate chips and stir well.
  3. Gather the mixture into balls sized according to your preference, and roll and shape them up gently.
  4. Then place them in the fridge to chill for about 20 minutes.
  5. Meanwhile, melt the white chocolate and semi sweet chocolate.
  6. Dip some of the chilled No Bake Caramel Chocolate Treats in the white chocolate, some in the semi sweet chocolate and leave some plain to enjoy.
  7. *These No Bake Caramel Chocolate Treats can be stored in the fridge for about a week.

Well, when I saw the first pic, I was scared cause for a second I imagined you had used the mouthwash as one of the ingredients. I've got a creepy imagination, haven't I? Glad you didn't use any (Although I like this brand) in these fabulous treats. Also, I feel you...4 days (even less by now) are so little, but I hope you having a lot of fun, ladies. Time really is flying these days, Shashi! I know you feel it with the college countdown, and we feel it every time we look back at pics of Robbie. He's changing so much so quickly these days. I hope you and lil Shashi are enjoying these last few days of summer. And just think how great it will be when she comes back home on a random Fall weekend (to do laundry) or for Thanksgiving break (to do laundry). :-) I'm loving these chocolate caramel no bake treats...I think you've certainly mastered them by the looks of these!
