So, When I found out this month’s Recipe Redux theme was: “Bars & Bites for Brown Bags“…
I was jumping out of my skin… Ugh – wait…that’s not a good visual (specially with food around)… how about …. I was so happy I could give up chocolate for a week…GAH…who am I kidding – that’s so NOT gonna happen…clearly, I have been so happy I haven’t been able to think clearly -for sure!
So let’s just gaze at these bars…look real close…
They look good – don’t they? 🙂
With all that chocolate (that is if you are a chocolate
addict lover) and ground up oats (aka oat flour) and cashews – these sure do pack a huge taste punch!
That’s not all…
These bars have a whole cup of fiber and protein packed cannellini beans as well as some omega-3 rich flax meal added in to “oomph” them up!
My daughter says that sometimes I am psychic (most other times she says I am psycho -but that’s not relevant today); so drawing on my psychic abilities, I know you must be thinking: “ugh – beans in bars – how could she???!!!” but, I must say, the beans can hardly be tasted in these bars – they do seem to have affected the texture of them though – resulting in bars that are far less crumbly and a tad more dense.
As you read this post (provided it’s in the early morning), I am sitting here enjoying the last remaining bar of this batch – I gotta say, these bars are so good they have me wanting to jump out of …my chair! And do a jig!
Chocolate Bean & Oat Bars
- 2 cups ground oats I used my blender
- 1 cup cannellini beans either canned or soaked and washed and cooked
- 2 tablespoons flax meal
- 1 egg
- 1/2 teaspoon salt
- 2/3 cup brown sugar
- 2/3 cup melted dark chocolate I used 75%
- 1/2 cup melted coconut oil
- 1 teaspoon baking powder
- couple handfuls of chopped cashews
Preheat oven to 375
Mix ALL the ingredients in a bowl in order
Press well into a parchment lined baking square/tray
Bake for 22-25 minutes
Let cool completely before cutting into.
