Oatmeal Wild Blueberry Breakfast Smoothie

Oatmeal Wild Blueberry Breakfast Smoothie

When it comes to smoothies, I am pretty boring.
I don’t post a whole lot of smoothies on here because I’ve kinda stuck to the same 4-ingredient green smoothie for months – maybe, even years!

Then, recently, Kara @TheFoodieDietitian gave me a heads up about a Wild Blueberry Smoothie Contest. Now, win or loose, I do so love a challenge so I figured, why the heck not. Besides, I figured, I might actually come up with a second smoothie I could add to my smoothie rotation!

Oatmeal Wild Blueberry Breakfast Smoothie

My bowl of breakfast oatmeal was my inspiration for this Oatmeal Wild Blueberry Breakfast Smoothie. This smoothie is sweetened with dried apricots and an overripe banana. And, with coconut milk, this smoothie also happens to be lactose free. I added in a pinch of cinnamon and some peanut butter to the oats and Wild Blueberries too.

Then, I topped it up (much like I do with my bowl of oats) with a few sliced banana pieces, a few Wild Blueberries, a smidge of Quick Oats and a decadent drizzle of melty peanut butter!

Up until this contest, I used to think a blueberry was just a blueberry. But, then I learned that blueberries and wild blueberries are two totally different entities!

Wild blueberries differ from their counterparts because of their:

More Intense Blueberry Flavor:
Wild blueberries have a more intense sweet and tart “blueberry” flavor than regular blueberries attributed to the fact that they grow wild, with thousands of interlocking plants spreading naturally across fields called barrens. They are called “Wild” because they are. Wild Blueberries are not planted and occur naturally in barrens and fields in Maine and Eastern Canada that have been here for 10,000 years.

And, Boatload of Antioxidants:
Wild Blueberries are said to have twice (2x) the antioxidant capacity of larger cultivated blueberries, with touted health benefits to gut health, diabetes, cancer and brain health.

My daughter said that I was being just too extra with my toppings and she opted to have hears pretty much naked – so maybe am being extra, but no drizzle of peanut butter=naked smoothie to me!!

99% of the Wild Blueberry crop are individually quick frozen (IQF) at harvest, locking in their nutrition and taste. It’s nature’s pause button!
You can find Wild Blueberries in the frozen fruit section of your local grocery store; just make sure the package says “Wild.”

Oatmeal Wild Blueberry Breakfast Smoothie

Total Time: 5 minutes

With Wild blueberries, oatmeal, dried apricots, a banana, and peanut butter, I am thinking this Oatmeal Wild Blueberry Breakfast Smoothie is pretty much breakfast blended up - don't you?

Ingredients

  • 1 cup frozen Wild Blueberries
  • 1 cup low fat or fat free coconut milk
  • 7 dried apricots
  • 1 overripe banana
  • 1/4 cup quick oats, not rolled oats as they were just too gritty
  • 2 teaspoons peanut butter + 1 teaspoon, the 1 tsp melted to drizzle over the top
  • 1/8 teaspoon cinnamon
  • 1 teaspoon pure vanilla extract

Instructions

  1. Add frozen Wild Blueberries, coconut milk, dried apricots, banana, oats, 2 teaspoons peanut butter, cinnamon, and vanilla extract to a blender.
  2. Blend on high
  3. Pour into a glass, and if so desired, top with a few banana slices, apricot chunks, oats, and melted peanut butter and enjoy!

Wow Shashi!! This smoothie looks incredible! So beautiful! Love the colour. Blueberries are my favourite berry, so I can't wait to try this. Such a great idea to add dried apricots too. Yummy! Pinned <3

What a fun new smoothie to add to your rotation, Shashi! I love wild blueberries...especially in muffin form! Haha! I've actually got this fantasy where I find a secret barren of wild blueberries, and I pick gallons and gallons of them. This fantasy actually exists for all wild berries...and for ramps, too. So far, I have failed in my quest...but one day... In the meantime, I'll grab some wild blueberries from the store for this smoothie. It sounds delicious! And I love the added apricot in there. Oh, and I'm sure it will make Lil Shashi happy, but I'll probably opt for a naked smoothie myself. But I'll take either version in a heartbeat! Yum!! :-)
