Sometimes, I just let the stress ebb away and think of NOTHING…
Sometimes, I get bored and let my mind wonder…
I don’t think I could EVER get bored of this peach jelly!!!

Because of her, I have experimented with putting peach jelly in just about EVERYTHING!
Last night, I tried it on some salmon. I couldn’t really taste the peach jelly – it kind of mysteriously mated with the lime and jalapeño to produce this tangy, sweet, slightly spicy, salmon – like I’ve never tasted before! When I asked my daughter to taste it and she finished her whole piece on the walk from the kitchen counter to the kitchen table (all of five feet!) – I figured I had a winner!
I have always liked my salmon salmony with some salt, pepper and whatever other spices I fancied and had on hand…I have read about using honey and sugar on Salmon on other food blogs such as Pinch of Yum, but I had never tried it – till this peach jelly came into my life 🙂
Salmon fillets (for two)
Salt and pepper to taste
2 teaspoons peach jelly
half a jalapeño
half a lime
small handful of chopped parsley
Cut the guts out of the jalapeño and chop it up – please don’t make my mistake and clean out the spicy part with your bare fingers cos they will B.U.R.N.!!!
Heat up the olive oil on medium flame
Sprinkle salmon with salt & pepper, 1 teaspoon of peach jelly and slight squeeze of lime and place in pan – skin side up.
Flip over after a few minutes or when the salmon is slightly golden and cook skin side down.
Sprinkle the jalapeño on top
Coat the top with the rest of the peach jelly, and squeeze on more lime and top off with parsley before devouring!
