As a person, I am a whole bunch of layers stacked up, one on top of each other, in one complicated mess.
That Green Ogre and his buddy, Donkey, were onto something when they talked about ogres having layers like an onion. You see, we as people have a lot in common with ogres in that regard. And, I for one, don’t like to let those layers peel off – unless you happen to be a good friend or a good bloggi-friend.

But, at times, those stacked up layers aren’t all bad. Those layers are what help me believe my smile when things aren’t so great, those layers are what help me forget what’s going on with me and listen to someone else’s story and, those same layers are what help me not jump around and smack everyone on the arm because I won the lottery!

Oh wait – I wasn’t talking about the lottery that is advertised on a multitude of billboards around town. I’m talking about hitting the jackpot in the dessert lottery. Now I don’t mean to say that this trumps ALL desserts- but, when my daughter calls me up for the 5th time in an hour just to tell me that she thinks these cups trump all of the desserts that have come out of my kitchen this year – well – score!

This past weekend, I was fortunate to be present at a demo at Walmart, featuring RITZ Fresh Stacks Original and Peter Pan Simply Ground Peanut Butter. The gentleman conducting the demo, stacked up layers of RITZ Fresh Stacks Original, Peter Pan Simply Ground Peanut Butter and bananas or strawberries for a simple, portable and delicious snack and that’s when the idea for these Peanut Butter & Chocolate NoBake “Cheese”cake Cups hit me.

I think that Peanut Butter and Chocolate are a match that’s hard to beat – but, add RITZ Fresh Stacks Ultimate Original as a third wheel and heyyyy – that match is elevated to EPIC status!

For these cups, I simply stacked RITZ Fresh Stacks Ultimate Original crackers with a layer of Peter Pan Simply Ground Peanut Butter and chocolate flavored cashew-coconut cream (hence the “cheese” being in quotation marks). I topped that off with a layer of melted semi-sweet chocolate and layered that with another RITZ Fresh Stacks Ultimate Original cracker. Salty, sweet, creamy, crunchy, all these delicious layers work so well together in one uncomplicated cup! See – layers can be good!

Peanut Butter & Chocolate NoBake “Cheese”cake Cups

Yield: 6 cups
Prep Time: 8 hours
Total Time: 8 hours

Delicious Peanut Butter and Chocolate "Cheese"cake-like cups on Ritz crackers make for a wonderful taste and textural experience for your mouf!

Ingredients

  • 12 RITZ Original Fresh Stacks Crackers
  • 6 Silicone cups

For the "cheese"cake layer:

  • 1 cup raw cashews
  • 2 cups water
  • 1/2 cup the solid part of a refrigerated can of full fat coconut milk
  • 2 tablespoons Peter Pan Simply Ground Peanut Butter
  • 1/2 cup chopped up good quality milk chocolate

For the top chocolate layer

  • 1/2 cup chopped up good quality semi-sweet chocolate

Instructions

  1. First, place cashews in a bowl with water and let soak overnight
  2. Then, the next day, drain cashews and place them in a blender.
  3. Add coconut milk (solid) to the cashews and blend on high till a cream is formed.
  4. Melt the chocolate (I melted mine in a microwave in 2, 30 second intervals)
  5. Add in the melted chocolate and peanut butter and blend till well incorporated
  6. Add Ritz crackers to the bottom of each silicone cup
  7. Drop 2-3 spoonfuls of Peanut Butter and Chocolate Cashew Cream Mix on top of Ritz crackers and refrigerate.
  8. Then melt the semi sweet chocolate.
  9. Remove cashew cream cups from the refrigerator and pour 1 tablespoon of melted semi sweet chocolate on top of the cashew cream layer and refrigerate again till firm (about 2 hours)
  10. Top with another Ritz cracker and decorate if desired and enjoy!

Everything is good on a Ritz! Major score with your daughter - these are a must try then for me. These chocolate flavored cashew-coconut cream stacks sound incredible! Topped with chocolate, too. Oh my Shashi, so good. :)
