Dates and peanut butter and chocolate are a combo hard to resist – agree?
I must have been 5 or 6 when my mom made the most exquisite homemade frosting stuffed dates – now, that combination might sound weird, but in just the right proportion, these dates were simply exquisite! And, that’s when my mild
ly insane obsession with dates began!
Moving to Abu Dhabi with my parents, didn’t do anything to kill my obsession. In Abu Dhabi dates were plentiful – fresh dates, dried dates – they were EVERYWHERE! When people came to visit – they brought dates over; when we went to the store – it was dates that would ALWAYS be on sale! All these sweet dates – what was a girl to do!!!
Other than, I guess, to
overindulge an obsession!
But, there IS such a thing as too much of a good thing! And eating dates like they are popcorn doesn’t make for a happy digestive system. My little obsession ended up with me in the ER and my parents swearing never ever to let me near dates again!
Quitting dates cold turkey was rough – but quit them I did – at least until I managed to convince my parents I had control over my obsession!
These days I don’t eat dates like I used to but, they were my first love – even before chocolate! These days I manage to stick to a couple (of a couple) of dates with peanut butter – before and after a run or long workout. If I am out of Chocolate Beet Cookies or Beet Dessert Pizza, I will have a few dates with peanut butter and a few chocolate chips – this little combo manages to squelch my sweet tooth and give me my chocolate fix, and, it’s this little combo that fueled these muffins.
Date paste is the only sweetener in these muffins. Now there are many variations of date paste around, mine is simply 2 cups of water and 2 cups of dates with 5-6 cardamom pods and cloves. I boiled them all together for 30 minutes and then threw them in my blender and voila – Cardamom and Clove Spiced Date Paste!
These muffins are not light but dense in texture; they are not sweet – but (like the Little Bear’s porridge) just right; and with a smidgen of lignans in them, they are perfect for breakfast or a pre/post workout snack – or, drowned in chocolate sauce, a better for you dessert! These also just happen to be gluten free!
