I adore pumpkin, peanut butter and chocolate; there have been times when I have made pumpkin and chocolate bars and smeared them with peanut butter and there have been times when I have made pumpkin, kabocha scones and smeared them with melted chocolate and peanut butter. This weekend I figured I would unite all my favs in none other than pancake form!
Aaaaannnnd if -like me- you are an adorer of all things pumpkin, peanut butter and chocolate, what would be more MARVELOUS than these pancakes? Well – just maybe this following story…
According to this article on Huffington Post, for the last 25 years, a company called GungoHo has been buying peoples groceries around the holiday season. This year, a YouTube channel, LAHWF, captured the people whose day “or year” was brightened by this company’s generosity.
I simply could not pass over this beautifully MARVELOUS story!
And I also simply could not pass on this trailer for “I, Frankenstein” which I caught before watching “Catching Fire” with my daughter this weekend!
“Frankenstein” is Aaron Eckhart who is also one of my favs – very much like pumpkin, peanut butter and chocolate !

2 tablespoons peanut butter
1 tablespoon melted coconut oil
2 tablespoons 100% pure pumpkin puree
1/2 teaspoon salt
2/3 cup whole wheat flour
1 teaspoon cinnamon
1 teaspoon vanilla
2 teaspoons baking powder
1/2 cup almond milk
Handful of semi sweet mini chocolate chips
Mix all the ingredients together
Brush a pan with olive oil, and drop 3-4 tablespoons of mix
Cook on low to medium heat for 2 to 3 minutes or till done, on both sides.
*For the peanut butter/chocolate addicts, serve with more melted chocolate and peanut butter to take these pancakes to a whole new level of MARVELOUSNESS – if you are not an addict yet – THIS might lead to an addiction!
