With it's abundance of folate, Vitamins A, C, & K, Dietary fiber, Copper, Potassium,
Manganese, & Phosphorus, the almighty asparagus was on the dinner menu last night!
Now that that song is stuck in your head...
Asparagus is also given kudos for it's healing and cleansing properties; it acts as a diuretic as well as a laxative; it's amahzing at protecting small blood vessels; & with it's high content of vitamin C, green asparagus also helps your body make collagen - that keeps your skin oh so beautiful 🙂
Ingredients for last night's recipe were:
an onion, 2-3 cloves or garlic and a teaspoon or two of ginger (all chopped up)
and Trader Joe's pepper jelly!
(This stuff is SOO GOOD! Seriously! It's great with veggies, meats, cheese, even tofu!)
Started off by sauteing the onions, garlic and ginger till the onions caramelized a little, added the asparagus and a spoonful of water and after about 3 minutes, added the rest of the ingredients, including the pepper jelly (now you might be tempted to add the whole jar - but usually 2-3 tblspns suffice).
Then face planted into the whole plate! This dish could have been topped off with slivered almonds or pine nuts - for texture - but it smelt so good, we gobbled it up!
