Baked Pinto Bean & Coconut Fritters

Pinto Bean Coconut Patties

Staunch football fans seem to have their own language when they talk about their passion, and, to me, it all sounds a lot like Latin! And, no – I’ve never taken a Latin class. I couldn’t tell the difference between “sacking” or “snapping”. When I am at a football get-together and someone yells “why are we fumbling the ball?” my first thought is “aren’t we all sitting on the couch?” and my second thought is “I wonder if those are turkey balls?”

You see, while I might not understand the language of football – I am very fluent in the language of food! And – I speak it often – to others and myself! As I’ve mentioned before, most football get-togethers my daughter and I have been to don’t seem to have a lot of vegetarian options so, in addition to the tofu burgers, tofu skewers, and skillet bread, these pinto bean and coconut patties are on my rotation of vegetarian options to take over to said gatherings.

These are pretty simple to make – they don’t have a ton of ingredients (seven to be exact) and can be pulled together in a blender effortlessly before being baked. Since my last trip to Sprouts Farmer’s Market, I have been going there on and off as I simply love their fresh, natural, budget-friendly foods.

While I was there recently, I picked up some pinto beans and some coconut powder and used those along with onion, garlic, ginger, and an egg to make these patties. Now, you could pan fry these – which makes them juicier and crisper. But I was trying to save time and chose to bake and broil them instead. Besides, when they are baked and broiled, they are firm like a vada and go so well with some sambal oelek!

Simple and easy, these little Pinto Bean and Coconut Patties are delightful eaten with a spicy sauce, or sandwiched between buns and eaten as vegetarian sliders!

Ingredients

  • 1 15.5 oz can of Pinto Beans
  • 1 teaspoon garam masala
  • 1/2 an onion
  • 2 cloves garlic
  • 1/2 inch piece of fresh ginger comes to about 2 teaspoons grated
  • 3 tablespoons coconut powder
  • 1 egg
  • 1 teaspoon pepper
  • 1/4 teaspoon salt
  • Olive oil
  • 1 tablespoon fresh parsley optional

Instructions

  • Preheat oven to 400 degrees
  • Rinse and drain and then add pinto beans, garam masala, onion, garlic, ginger, salt, pepper, coconut powder and egg (and parsley if you are using it) to a blender and pulse a few times till ingredients are well incorporated.
  • Roll into balls and flatten balls and place on a parchment-lined baking tray.
  • Brush generously with olive oil and bake for 20 minutes
  • Remove tray temporarily, brush with more oil and broil for two minutes - keeping an eye on them so they don't burn.
  • Serve warm with sambal oelek or ketchup or chili sauce

    Sashi what a fabulous idea this is with all the goodness in it. I love that you add coconut in it, so much flavor. I visit Sprouts often and love it. We have so many Vegetarian friend and I love my veggie food, this is a great option and looks darn delicious.

  8. You my friend, hit the nail on the head. Football, is another LANGUAGE. And I am surrounded by men who are yelling out things like PUNT! And then there’s Hudson, who stands right in the MIDDLE of the action in front of the screen that they’re all trying to see. And he cheers, yells and grunts. It’s really funny to see. He’s got the spirit, just not the words. I have visited Sprouts and I wish we had one around here. You are so creative with this dish. I would love a pinto bean and coconut slider for lunch.   9. It wasn’t until I fully read the recipe and you said “sandwiched between buns” that I thought, these would have been amazing for me to have had on the day trip I’ve got planned in the Scottish mountains on Saturday!

    I’ll pin this for next time. I’ve already sorted out my food for Saturday, but I can imagine really enjoying these in the fresh cold snowy air!

  19. You know, Shashi. I could help you out with Latin. We could start an intensive course, and after a few weeks (maybe a few months), I’ll have you up and running with your Latin speaking skills. Then you can hang out with the Pope AND you’ll be ready for the start of next football season. All I require is some of these amazing looking patties. You’re a master at creative unique recipes, and this one definitely fits the bill. Sounds delicious!!
