Caramelized Onion & Beyond Meat Crumbles Pizza

For the past 3 weeks, the church I go to has been doing a series on “Life Hacks”…
Or ways to make this crazy life a little more understandable.

Each week, the series opens up with a short clip of a “life hack” such as (1) spearing the filling of an Oreo with a fork before dunking it into a glass of milk to keep your hands free of milk and for equal dunking of the whole Oreo as well; and (2) cutting off and using the bottom half of a cupcake to sandwich the frosting so that the frosting doesn’t end up everywhere on your face.

Food analogies make all things understandable to me! 🙂

Beyond-Meat-Beef-Crumbles

This week, one of our pastors spoke about favoritism and conscious and unconscious bias and about treating people more vulnerable than us, with grace; and along the way, stories were related to illustrate. One of the leading stories was about a basketball coach here in Georgia, who extended an invite to a boy with MS who was bound to his wheelchair to join the team – without judging him and ruling him out because of his physical attributes. And another story was about another pastor who, every time he left a hotel room, straightened up the room as he wanted to make the job of the person cleaning up after him – easier. What a way to add value to someone’s life!

Aaaand – speaking of adding value to someone’s life…I was given the opportunity to try out Beyond Meat’s Beefy Crumbles this past week and they are one of the best plant based meat substitutes I have tried! After having enjoyed their chicken substitutes in this Stir Fry and this Cashew Curry, I was not disappointed by their beef-less beef crumbles! These beef-style crumbles have all the protein of real ground beef and are ready in minutes on the stovetop, and in seconds in the microwave! And, they’re 100% vegan, as well as non-GMO, gluten-free, soy-free, and kosher certified!

I used a gluten free partial-beet crust as the base (you could use this beet crust or any other pizza crust of your choice) to a heap of caramelized onions and spiced up “Beefy Crumbles” – and a simple and quick and easy AND delicious dinner was polished off by us gals!

Beyond Meat’s Beef-Free Crumbles come in two flavors – Beefy (classic ground beef style, which I tried) and Feisty (with a tad more spice and kick!), and are available at select Publix, Whole Foods and Target stores.

Pizza with Caramelized Onions & Beyond Beef Crumbles

Ingredients

  • For the Partial-Beet Pizza:
  • 3/4 cup beets, roasted/boiled and pureed - I roast about 8-12 beets at once, puree them and freeze them in plastic baggies and thaw and use as needed in pizza or cookies/brownies
  • 3/4 cup almond meal, or hazelnut meal
  • 1/2 cup chickpea flour, or rice lour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon olive oil, or coconut oil
  • Toppings
  • 3 Onions thinly sliced
  • 1 1/2 cups Beyond Meat Beefy Crumbles
  • 1/4 teaspoon cumin
  • 1/4 teaspoon cayenne
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon paprika
  • 1/2 cup cheese of your choice
  • Parsley or herb of your choice

Instructions

  1. For the Partial-Beet Pizza:
  2. Pre-heat oven to 375
  3. Mix beets, almond meal, chickpea flour, salt, baking powder and olive oil (mix will be wet)
  4. Pour and spread mix onto a parchment lined baking tray and bake for 25 minutes
  5. Toppings
  6. Meanwhile, in a pan with olive oil, saute onions for 25 - 30 minutes stirring often
  7. Add the cumin, cayenne, turmeric, paprika and stir well
  8. Add Beyond Meat Beefy Crumbles and saute for about 5-7 minutes
  9. Pile onions and Beefy crumbles onto pizza base, top with cheese and parsley or herb of your choice and bake for another 5 minutes or till cheese melts.

That pizza has me salivating this morning and I could knock off for a few slices for breakfast right now! You can't go wrong when you have caramelized onions in a recipe.... I love caramelized onions. :)
