Gluten Free Potato Bacon Pancakes

These delicious, gluten free Potato and Bacon Pancakes are a wonderful way to get your weekend dose of potatoes, bacon and eggs!

Bacon Potato Pancakes

Being low carb and gluten free, bacon has always held a special place in my heart…and, in my heart it will probably always remain – literally! Most of the time, I use bacon as a topping – I sprinkle a little on Breakfast Potato Skins or on Breakfast Beet Pizza, so when I came across Chris @IFailedFran’s “Bacon Explosion I could only scroll in wonderment! It was weaved bacon with more bacon inside. I have to admit – I’d never seen so much bacon in one mouthful before. This was clearly a tangible and edible Pindaric Ode to bacon!

Gluten Free Potato Bacon Pancakes

If I were to think back to my middle school poetry class, what I have today isn’t quite a Pindaric ode, but more a Horatian one.
You see, these pancakes have bacon in them – but, there is just a tad bit of it – some (my daughter) might say I should have added more – but, seeing “balance” is the word of the month round this place I figured 4 crumbled up pieces of bacon were enough. She talked me into topping these pancakes with more bacon and I told her if she had some veggie and pickled beet saute for dinner, we had a deal!

Flourless Bacon Potato Pancakes

These pancakes are a marriage of potatoes and bacon and eggs. Instead of having them separately for breakfast – you can join them together with some coconut milk and voila – deliciousness! Now, as usual, these pancakes have no added flour in them – in any form. Just smooshed up potatoes, coconut milk, eggs, chives, bacon and a pinch of salt. As these didn’t have any flour in them – they did take almost 5-6 minutes on each side to cook.

  10. Tara says:

Two of my favourite ingredients = winning recipe! I have bookmarked this for later, although I’m definitely going to have to use the “ton of elbow grease” method, as there is no room for a food processor in my gypsy life!

    • Shashi says:

Thanks Tara! “Ton of elbow grease” is how I did it too for the longest time – it can actually be kinda fun when you have something bugging you! 🙂

  11. anything with bacon in it is a winner for me!

    • Shashi says:

Hahaha! Bobbie – your boys and my girl think A LOT alike! Every trip to the grocery store my daughter grabs bacon and puts it in the cart and I take it out and place it on the shelf 6 out of 10 times!

  15. Kelly says:

These pancakes look incredible, Shashi! Love that you made them with potatoes! Such a great idea to add bacon too 🙂

  16. The phrase that totally got me was that it was a marriage or potato, bacona and eggs. What is not to love about this trio? 😀

  17. Elizabeth says:

YUM!!! Way to knock it out of the park on this one… pinning, sharing, and yes, making ASAP!

  18. What!!! Making pancakes with potatoes?!?! Be still my pounding heart. I seriously love that you did this, and while I’ve never been a huge fan of bacon, I’d be MORE than happy to eat these with maple syrup and almond butter. Does that sound crazy? Naaaaah

    • Shashi says:

Dang lady – your comment gave me food for thought (though food is always in my thoughts) I think you might be onto something with potato pancakes and maple syrup and AB! My daughter has been bugging me to make these again – I might have to try your suggestion next!

  19. WOW, these look incredible! Potato pancakes + bacon = major comfort food! Pinning!

  20. nagimaehashi says:

  21. Oh heck yeah to potato pancakes! They remind me of my childhood and my Polish mother. Thanks for the lovely memory!

  22. Duuuuude these look Epic with a capital “E” I mean, potatoes and bacon is hard to beat especially in pancake form. Great job my friend!

  23. Kalee says:

I love potato pancakes, but have never added bacon before. Genius! These look like they would be a winner in my house for sure!

  24. asha Shiv says:

What a fabulous idea as always. The potatoes with the bacon sounds so good. My little one would say the same thing, more bacon. He is the only one who has bacon at home and just love it.
    This looks amazing.
Hope you are doing well. I apologize, I haven’t been able to visit quite often in the last few weeks, catching up on your lovely posts.
    xoxo

    • Shashi says:

Oh Asha – no need to apologize – I know all to well how crazy life can get – thanks so much for your sweet words.
Yes – am doing well – I hope you are too, my friend. xoxo

  25. Catherine says:

Dear Shashi, I am in awe of these potato pancakes. They looks absolutely fabulous…the texture is beautiful. I am pinning and definitely giving these a try. xo, Catherine

  26. Sonali- The Foodie Physician says:

This is such a creative recipe and these beauties look so fluffy and delicious! Your line “..and, in my heart it will probably always remain – literally!” made me laugh out loud 🙂

    • Shashi says:

Haha! I had a teenager (not my daughter) once tell me that she’d rather eat bacon than have a boyfriend because bacon will stay with her forever…she went on and on about bacon, Sonali – you would have been laughing uncontrollably like I was!

  27. These look so light for being potato pancakes! Such a fun all-in-one breakfast. Pinned!

  28. These pancakes look amazing Shashi! I can’t believe there’s no flour of any kind in them!

    • Shashi says:

The secret was mixing the potatoes and coconut milk up real good – at least, that’s what I think…BTW – thanks so much Christin 🙂

  29. Wow! This sounds and looks so amazing! YUM!

  30. Goodness, Shashi, I can’t even eat bacon and I can’t stop staring at these pictures, hahaha. I will have to attempt this with turkey bacon! (Pancakes are my worst enemy though–they never come out looking so perfect!)

  31. Those look amazing. I love bacon, and those pancakes are just perfect.

  32. I love potato pancakes, but I haven’t made them for ages. And coconut milk in them? That’s definitely something new to me! Love the addition of bacon. I think I could substitude it for some chicken bacon and thus to double the amount. As you said, we need the right balance and the chicken bacon doesn’t have enough fats and calories to reach this balance, haha. I should make this. And serve with sour cream…mmm I’m already jealous of myself! 🙂 Well done, Shashi!

  33. Did someone say bacon??? I was sure I heard it. And no flour??? This is amazing Shashi. I would gladly take a stack of these any day of the week. Pass me a fork! (Or two.)

    • Shashi says:

You heard right, my friend – no flour at all – but there’s full fat coconut milk and full fat bacon in it to make up for the lack of flour 😉
I’ll pass you a fork or 2, but you are gonna have to wrestle these out of my daughters hands – she only let me have one! teenagers!!!!

  34. Love the idea of savory pancakes, though I’ve never actually made them?! I have an intense sweet tooth, but I can do bacon+potatoes anytime!

    • Shashi says:

I have an intense sweet tooth too Erin – Amanda suggested making these without bacon and having them with maple syrup and almond butter – which actually sounds pretty good…

  35. spicedblog says:

Hahaha…you just totally brought out my inner nerd. All of the ode talk first made me cringe when I thought back to my university course on Latin poetry, but then the strangest thing happened. I kinda missed it. I want to reach up and grab a Latin poetry book from my bookshelf now! But only after I finish drooling over these delicious looking pancakes! Oh, and I’m with ya on Horatian ode, but Pindaric odes often featured a chorus (if I remember correctly). Bacon just requires a chorus of people chanting. Just sayin’.

    • Shashi says:

Hahaha – I’ll join you in chanting for bacon – because bacon IS BACON!!! Once a month I go through the submitted posts to The Feed Feed and I am supposed to pick the good bacon ones – and dude – it’s so hard looking at all those bacon photos! Recently, there was a submission for Miso Corn & Bacon Hand Pies – I’m thinking I need to go get a bib!

  36. cottercrunch says:

i want to marry you for marrying these two flavors and making them gluten free. You know the way to my heart! <3

  37. potatoes and bacon go together like chocolate and PB!

  38. Angie@Angie's Recipes says:

This might trick my husband eat some potatoes. Strange, huh? The only potato product he eats is French fries…baked or fried. Your pancakes look fantastic, Shashi.

  39. I love how you used potatoes for these pancakes. Yet another brilliant versatile ingredient I would never have thought of putting into pancakes. We’re not so into pancakes over here, but we really should be, especially when we are missing out on great starts to the day, like these!

Now I have a perfect recipe from you for using up my left over potatoes on a Friday night for a delicious post gym workout brunch on a Saturday morning! Awesome. 😀

    • Shashi says:

Thanks so much Neil! We eat ALOT of pancakes in our home! I try to make them healthy like oatmeal pancakes and green smoothie pancakes – but every now and then I make them a little indulgent like these ones!
If you happen touse your leftover potatoes, I would love to know how yours turns out – I had to cook mine for almost 6 minutes over a low/medium flame – the first coupe I under cooked and overcooked before getting it just right…hopefully you won’t have that problem

  40. Mira says:

These look perfect Shashi! I also try to follow low carb diet, but I just can’t live without bacon! Pinned to try them!
