Did you happen to catch the solar eclipse last Monday? If you did, was it a total one or a partial one in your neck of the woods?
It’s been a week since my last blog post and I wish I had a good excuse – like maybe I glanced at the eclipse and it’s beauty took my sight away temporarily or something…but alas, I am the worst at blogging on the regular or scheduling a blog post!

In fact, I didn’t even catch the eclipse as I was in Phoenix for a blogger trip which I will share more about on Thursday – that is, if I can actually stick to this schedule! But, I couldn’t help oohing and aahing through pictures of the eclipse on my Instagram feed late Monday night! But the pictures weren’t all. There were tidbits of news I happened on that talked about flowers closing and opening in the middle of the day, cicadas making loads of noise at the early onset of the eclipse and then going totally quiet when totality occurred, and tons of Atlantic salmon washing up onshore due to crazy tidal waves that ripped through nets penning the salmon in. While I am a total slacker at scheduling blog posts, I do so love reading up about spooky phenomenon so please do tell me, did you happen to see or hear about any other spooky eclipse phenomenon?

Pecan Pumpkin Muffins

As this post seems to be about eclipses and excuses…I figured I would excuse myself and introduce a pumpkin recipe on here a little early in the season in the form of these Pumped Up Pumpkin Caramel Muffins with Pecans. I know pumpkin is more a fall flavor – but, it’s no secret I enjoy it all year long whether that be in bean curries or almond meal porridge.

So, when I got back from my trip and found I hadn’t got much supplies in my kitchen other than some pecans, pumpkin puree, eggs, oats and Premier Protein Vanilla Powder, I figured I could use them all in these Pumpkin Caramel Muffins with Pecans. These muffins are so easy – just mix dry ingredients like Premier Protein powder sugar, ground up rolled oats, baking powder, pumpkin pie spice and salt together and mix wet ingredients like egg, pumpkin puree, Premier Protein Caramel Shake, and almond extract together and then introduce them to each other. The result are some light and delicious muffins that have a good pump of protein in ’em and pair oh so well with a this delicious Mocha Chia Shake!

Pumpkin Pecan Protein Muffins

Pumped Up Pumpkin Caramel Muffins with Pecans

Yield: 6
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes

Ingredients

  • 1/4 cup Premier Protein Vanilla Shake Mix/Powder
  • 3/4 cup gluten free rolled oats ground up (I used my blender)
  • 1/4 cup brown sugar
  • 2 tsps baking powder
  • 1 tsp pumpkin pie spice
  • 1/4 tsp salt
  • 1/2 cup Premier Protein Caramel Shake
  • 1 egg
  • 1/4 tsp almond extract
  • 1/2 cup pumpkin puree

Instructions

  1. Preheat oven to 375 degrees
  2. Mix the dry ingredients such as Premier Protein Powder, rolled oats, brown sugar, baking powder, pumpkin pie spice, and salt together in a bowl.
  3. Mix the wet ingredients such as Premier Protein Caramel Shake, egg, pumpkin puree and almond extract together.
  4. Mix the wet and dry ingredients together gently and spoon into lined muffin cups
  5. Bake at 375 degrees for 15-18 minutes
  6. *As oven temps vary, so please do check around the 12 minute mark.

So we planned on getting some of those eclipse glasses to watch the show last week, but they were all sold out here in town. Like every store had a sign on the window saying "glasses are sold out." (And we were only in the 70% band for the eclipse!) But then Laura managed to get a pair at work. I tried making the homemade "binoculars" out of a cereal box, but I was really disappointed in that one. Then Laura surprised me by driving home early so I can use her glasses and still catch a bit of the eclipse. It was awesome! I should thank Laura for doing that...perhaps with a batch of these muffins! They are literally screaming my name right now. Pumpkin + pecan in muffin form is right up my alley. And I love that you used protein powder in these, too! :-)

The title of this one reminds me of that song 'Pumped up Kicks' :D We didn't get a full eclipse around here like other parts and to tell you the truth I didn't really notice anything. I think I may have been inside at the time, lol. Anywho, from the pics that I did see and the talk about it, it sounded pretty freaky :) Loving these muffins, Shashi! I happen to love all sorts of pumpkin things anyway so these are right up my alley :) Perfect with a cuppa joe right about now. Hope your doing well! Cheers to an awesome week! XO

These look like super easy, super tasty muffins Shashi. :-)

I particularly like the addition of the Caramel Shake, now that's different. I bet that adds a whole new dimension.
