My life can be pretty ordinary, but every now and then something extraordinary happens when someone shares their stories with me. Sometimes, they do it willingly; and sometimes, they don’t realize they are doing it because I tend to eavesdrop!
This past Friday, when my daughter and I stopped at the post office on our way to Target, I happened to overhear a conversation between the clerk and a customer. I heard him ask her if she liked chemistry. I didn’t quite hear what she said, but he went on to ask her if she knew what it was that reacted with other elements that increased their velocity or energy. Again, I didn’t hear what she said, but he went on to say that the answer was a “catalytic agent”. He went on to say that sometimes, people come into our lives and they increase our happiness or make us happy without either one realizing what’s happening. He then looked at her and told her that that was what she did to those around her.
Talk about heart melting!
When we saw her out in the parking lot, she was grinning ear to ear. That clerk sure made her day, just like she made his.
With lows hovering around 58 F (14 C) in the early morning hours here in Atlanta, what makes me grin ear to ear are multiple cups of Dunkin’ Donuts® Pumpkin Spice Coffee and Pancakes with Pumpkin Spice Latte M&M’s®! Even my daughter starts grinning when said pancakes happen to be in cake form! I mean, a pancake cake even sounds more fun than a cake cake-right? Or is that just to us? 😯 So, after the post office, we headed to Target to pick up some seasonal coffee (which we found down the coffee aisle) and the latest flavor of M&M’s® (which were right by the registers)! By the way, the new Pumpkin Spice Latte M&M’s® are exclusive to Target stores.
Come Saturday morning, when the weather was damp and dreary outside – it was a party inside as we sipped on Dunkin’ Donuts® Pumpkin Spice Coffee while digging into slices of this Pumpkin Oatmeal Pancake Cake with Pumpkin Spice Latte M&M’s! This pancake cake took a little time to assemble, but it was well worth the effort!

The Totally Effort-Worthy Process!
➡ First, I made the the Pumpkin Oatmeal Pancakes by mixing together 1 1/2 c ground oats, 2/3 c Dunkin’ Donuts® Pumpkin Spice Coffee, 2/3 c milk, pumpkin puree, 1 1/2 tsp baking powder, 2 eggs, 3 tbsp coconut sugar, 2 tsp vanilla, 1/4 tsp salt, and 1/3 c Pumpkin Spice Latte M&M’s.
These pancakes were cooked for about 3-4 minutes on each side, over a medium temperature.
➡ Then, as the pancakes cooled, I made the Coconut Pumpkin Whipped Topping by mixing together the solid part of 2 cans of full fat coconut milk (that had been refrigerated overnight), with 4 tbsp pumpkin puree, 2 tsp vanilla, 1 tsp powdered pumpkin spice and 4 tbsp confectioners sugar – with an electric mixer.
I placed this in the fridge for a few minutes to harden up a bit.
➡ Then, I set about making the pumpkin syrup by placing 3 tablespoons of coconut milk in a small saucepan, along with 1 tablespoon pumpkin puree, 1 tablespoon coconut oil and a couple tablespoons of brown sugar. As soon as all ingredients were well blended, I removed this from the heat and let it cool to room temperature.
➡ I then set about assembling the pancake cake by layering:
➡ pancakes ➡ coconut pumpkin whipped topping ➡ 6 or 7 Pumpkin Spice Latte M&M’s and repeating till all were used up.
Then my daughter drizzled the pumpkin syrup over the whole pancake cake and we decorated with more Pumpkin Spice Latte M&M’s!
