So, I’m facing a bit of a conundrum that I might need your help with. When I count down to an event in the future, I usually count the day of the event as well as the day that I’m on. However, my daughter disagrees. For example, her graduation ceremony is taking place this Friday (YIKES!), so, I say there are three more days to graduation – today, Thursday and Friday. However, my daughter says there’s just one day to the big day and that’s tomorrow! Seeing that her idea of dividing three cookies equally between the two of us means two for her and one for me, I’m starting to think that this time, her math skills are just too warped – what do you think?

While we cannot seem to agree when it comes to counting days and cookie diving, we do seem to be on the same page that after this Friday we need balance back in our lives after running around like crazy people for most of this month. Those lazy evenings at home on a rainy day need to be balanced off with some serious hiking on those sunny evenings. And, meals of Teriyaki Chickpea Burgers or Spiced Lime Shrimp and Turmeric Cauliflower Rice need to be balanced off with sweet-tooth satisfying desserts like these Berry Rice Krispies Bars with No Churn Cookie Berry Ice Cream!

I picked up a package of Kellogg’s Original Rice Krispies Cereal and a package of Keebler Chips Deluxe Rainbow cookies from Target when we were there looking at dresses for some upcoming graduation parties. When I got home, I was in the mood for a crunchy bar, so, I figured I would use Kellogg’s Original Rice Krispies Cereal, along with some rolled oats and dried blueberries and strawberries to make some bars that would be festive enough for any 4th of July hikes or get-togethers.

As we’ve been making no-churn ice creams every fortnight, I figured I would add some smashed strawberries and blueberries to the one I was going to make and also add some chunks of Keebler Chips Deluxe Rainbow cookies to it. And then – my daughter had the idea to enjoy them together. Her idea was to top a Berry Rice Krispies Bar with some No Churn Cookie Berry Ice Cream, but I made a sandwich with the two and proceeded to mess up my face as I tried to eat it! These Berry Rice Krispies Bars are quite crunchy and a bit crumbly – but, when those crumbs mingle with that No Churn Cookie Berry Ice Cream, each spoonful is simply glorious!

Strawberry Blueberry Rice Krispies Bars with No Churn Cookie Berry Ice Cream

Berry Rice Krispies Bars with No Churn Cookie Berry Ice Cream

Ingredients

Berry Rice Krispies Bars

  • 3 cups rolled oats
  • 2 cups brown sugar
  • 1 cup coconut oil (or butter)
  • 3 eggs
  • 1 tspn baking powder
  • 1/2 tspn baking soda
  • 1/2 tsp salt
  • 3 cups Kellogg's Original Rice Krispies Cereal
  • 1 tbsp each dried blackberries and dried strawberries

No Churn Cookie Berry Ice Cream

  • 1 can condensed coconut milk or regular condensed milk (11.25 oz)
  • 1 can coconut milk (13.5 oz)
  • 2 tbsp smashed strawberries or strawberry puree
  • 2 tbsp smashed blueberries or blueberry puree
  • 3 Keebler Chips Deluxe Rainbow cookies crumbled up

Instructions

Berry Rice Krispies Bars

  1. Preheat oven to 350 degrees
  2. Line a 9x13 baking tray with parchment paper 
  3. Add oats, brown sugar, coconut oil, eggs, baking soda and baking powder, and salt into a blender and pulse till well incorporated and creamy.
  4. Using a spatula, stir in Kellogg's Original Rice Krispies Cereal and dried strawberries and dried blackberries.
  5. Spoon into baking tray and bake for 20 minutes.
  6. Let cool and then cut into squares and serve with No Churn Cookie Berry Ice Cream

No Churn Cookie Berry Ice Cream

  1. Add coconut condensed milk and coconut milk into a bowl and using an electric handheld mixer, mix well. 
  2. Pour into a freezer safe container and drizzle in the smashed strawberries or strawberry puree as well as the smashed blueberries or blueberry puree.
  3. Crumble the Keebler Chips Deluxe Rainbow cookies into mix and freeze overnight or at least 5 hours and enjoy with Berry Rice Krispies Bars, sliced strawberries and blueberries.

I like how she counts!!! That's how I count too. And my husband Jon counts just like you. HA HA. You two would get along great. Loving these crispy delicious bars - so nice for holiday desserts with the berries!!! Hope all is well my friend, I know the days are counting down. My prayers are with you --- and bring the tissues! You'll need 'em. We close on this house 6/12 and the new one 6/30 and Romania missions trip in between. Doubt I will be on here too much, just FYI, but I will be back in the swing of things a little later in the summer. Enjoy these sweet times with G and please give her my heartfelt congratulations on this big step. Hi Shashi. We've a cake bake sale on at work at the moment as I write this. Someone has made rice krispy chocolate squares but I think that YOUR rice krispie bars would win hands down if they were here! You can bet I'd be promoting them. We'd make a fortune for the charity. :-)

Well, you daughter and you might have different approaches to the Calendar, but there's one certain thing - you make the perfect team when it comes to cooking. What a fabulous dessert, Shashi! Cookies or bars and ice cream are exiting things on their own, but they also make the perfect duet. Normally, I'd ask to ship me some, but it's hot now so the ice cream won't make it. Thus, please send me only these bars :)
