When I confided in a friend of mine what my recent guilty pleasure has been, she told me that I need to keep some things to myself! The nerve!
But heck, you and I, we are friends here – right?
So it’s just right to share…
Well, recently, instead of burying myself in brain-building books or catching up on blog stuff, I’ve been indulging in some major Hulu-ing of some recent episodes of The Bachelor!
I know, I know – how could I, right? So many women…just one man? What am I thinking?
Yes…yes…I get it – I have entertained all those thoughts too – during previous seasons!
But this season, there’s Ben – Ben Higgins – who is not only easy on the eyes; but, also quite a charming lad.
However – it’s not him I wanna talk about.
When I was watching the recent “Women tell all” episode, a bunch of the ladies from the show were confronting one particular lady. Now, I haven’t watched all the episodes to understand the brevity of their accusations, but, I watched this one lady get so defensive during these accusations.
And it reminded me – that’s how I can get sometimes.
My same friend tells me that instead of getting defensive, she tries to understand that there might actually be something behind the accusations thrown her way – in a situation. And, she tries to think of what her actions or words were that lead someone else to accuse her… so she can change her ways moving forward…
And I realize I have a lot to learn.
It’s so much easier to defend myself than accept blame and try to grow from it – right? Or is that just stubborn ol’ me?
Well, since I’m trying to master being a part-time food blogger as well, I figure I need sustenance (aka food therapy) to help me master my own defensiveness and my stubborn ways.
And, these little Strawberry Milkshake Chia Cakes were therapy indeed!
Yes – they sound and are healthy – but – healthy can be downright decadent-right?
These Chia Cakes are a twist on the ever so popular Chia pudding and are super simple to make. They also happen to contain a healthy dose of Premier Protein, chia seeds and fresh strawberries, in addition to smidge of coconut flour and almond meal for texture. And – inspite of their ingredient list – they taste like a frozen Strawberry Milkshake!

Strawberry Milkshake Chia Cake
- 1 cup Premier Protein Strawberries and Cream shake
- 24 strawberries washed and stems removed
- 1/2 cup chia seeds
- 1 tablespoon almond meal
- 1 tablespoon coconut powder
- **optional coconut sugar to taste**
- Add Premier Protein Strawberries and Cream shake and strawberries to a blender and pulse till well incorporated
- Then stir in the chia seeds, almond meal and coconut powder (add coconut sugar at this point if desired)
- Divide "shakes" between 3 Mini Springform Pans or bowls
- Refrigerate overnight (8-9 hours)
- Top with fruit and coconut whipped cream and enjoy the next day
