Tofu Kebabs with Spicy Tomato Peach Sauce

I am not sure if I should be worried but my seventeen-year-old daughter has been opting out of hanging with her friends at the mall in favor of getting dirty, hiking in the woods with me.

I have such a hankering for hiking, and I always hoped I’d bump into someone who would get as excited about it as I do, I just never thought that my argumentative, “we-have-different-tastes-in-almost-everything-except-food“, daughter, would be that someone.

This past weekend, as we were debating if we should hike Mount Currahee or Mount Yona, my daughter tried to convince me that the lycopene in tomatoes was all the sunscreen we needed! “Let’s smoosh ’em and put ’em on, mom,” she said! Maybe she was trying to trick me into taking a comic picture for her Snapchat timeline, or, maybe she was just giddy about all the tomatoes we brought home from Sam’s Club. But, with reports of bear sightings, I wasn’t going anywhere with smooshed tomatoes rubbed on me!

Besides, we had brought home sunscreen, bug repellent (couldn’t find the bear repellent, though), and hats as well! Even though we are both lucky to have been born with a tan, we still have to be safe when out and about under the sun!

While we were at Sam’s Club, I also picked up a case of ripe and oh-so-juicy peaches. I really had no clue what I was going to do with them but when it comes to fresh produce, I am working on my issues to walk by and not buy them all!

When I was trying to figure what snacks to pack for our hike, I looked in the fridge and saw a block of tofu. It was then that I figured I should probably make a sauce using the tomatoes and peaches we brought home from Sam’s Club to flavor the tofu with. Seeing I like a side of spice in everything, I balanced off the sweetness from the peaches with a bit of cayenne and chili powder – totally optional if you don’t like it hot! My daughter suggested putting the tofu on skewers so we could eat them “kabab-style” and wouldn’t have to pack any utensils. So, that’s what I did – pairing them with some balsamic tomatoes (tomatoes tossed with balsamic vinegar and olive oil) and mozzarella.

Tofu Kebabs with Spicy Tomato Peach Sauce

Yield: 6 skewers
Prep Time: 10 minutes
Cook Time: 50 minutes
Total Time: 1 hour

A deliciously sweet and spicy, tomato and peach sauce perks up otherwise bland tofu - making it the perfect accompaniment to balsamic tomatoes and mozzarella!


For the Spicy Tomato Peach Sauce

  • 1 onion
  • 4 cloves garlic
  • 2 teaspoons grated fresh ginger
  • 1 cup chopped tomatoes
  • 2 peaches chopped, skins removed
  • 1 6 oz can tomato paste
  • 1 jalapeno chopped
  • 1 teaspoon cayenne powder
  • 1 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1 block extra firm tofu
  • 2 tablespoons balsamic vinegar
  • 2 + 2 tablespoons olive oil
  • 1 cup tomatoes
  • Mozzarella cubes


  1. Add olive oil to a pan and saute onion till translucent
  2. Add in ginger and garlic and saute a couple of minutes
  3. Then toss in the tomato paste, peaches, chopped tomatoes, jalapeno, cayenne, chili powder, salt and cover pan and lower heat
  4. Let cook on a very low flame for 45-50 minutes
  5. Place in a blender when cooled some and blend till smooth
  6. Use this sauce to coat tofu block (that has been drained on paper towels and cut in half)
  7. Grill tofu 4-5 minutes on each side
  8. Cube grilled tofu
  9. Meanwhile, toss tomatoes and balsamic and olive oil
  10. On soaked skewers, place tomatoes, mozzarella, tofu
  11. Then pre-heat oven to 325 and place kebabs in it for 5-7 minutes - making sure the mozzarella doesn't melt completely.

Hi Shashi! I'm interested that you mixed tofu with mozzarella.... they look GREAT on the skewers! And I love the idea of that sauce - I can think of all sorts of uses for that.

I sure would like to come on a picnic with you two! (although I'm not sure about the idea of those bears. Yikes!)

Memorial Day weekend, we took a trip to Aspen and went to Maroon Bells. That was some serious hiking. Maroon Lake is easily accessible but I wanted to see Crater Lake. Almost 2 hours of hiking up 500 feet in elevation, in rocky terrain and snow, we made it. I was quite proud of myself :) I love hiking too, and your daughter is growing up and beginning to appreciate it. The suace looks fab, but those kebabs look fantastic.
