They say you don’t miss what you don’t have. Now, I am not quite sure who “they” are, but, I think “they” sure know a thing or two! You see, other than a handful of super cold days, this winter hasn’t been all that bad here in North Metro Atlanta. No roadways icing over, no snow-laden branches falling, no major power outages, and I cannot say I miss any of it.
And, I am thinking it’s this mild Winter weather that has helped Summer find it’s way into my stomach so soon! By that I mean – I’ve been indulging in all the summer fruits of my youth! Growing up in Sri Lanka, ripe and juicy pineapples, mangoes and papaya were everywhere. So, everytime I stop by the Kroger at the top of my street, I end up stuffing as many ripe pineapples, mangoes, and papaya into my shopping basket as I can carry. On my most recent trip, I also nabbed some Quaker® Oats as Quaker® Oats and those tropical fruits are sure to help you #BringYourBestBowl! Now – how amazing is that!?
One of the rules of the Quaker “Bring Your Best Bowl” recipe contest is that your recipe can have no more than 2-5 ingredients – for a complete set of rules, please click >HERE< . The Quaker #BringYourBestBowl contest began in January and will run till March 16th, 2016, with the winner being announced in November. Which means you have a little less than a month to brainstorm and submit your winning recipe! Personally, I am keeping my fingers crossed the winner is one of y’all!
And now onto this bowl of summery fruitiness! I cooked a 1/2 cup of Quaker® Rolled Oats in 1 whole cup of lite coconut milk with a dash of salt and cardamom powder and cloves for about 5 minutes over a low to medium flame.
I wish y’all were in my kitchen to smell the intoxicating aroma of cardamom intermingling with coconut milk! I removed this off the heat and topped it with ripe and juicy chopped up pineapples, papaya, and mangoes. Now the fruit was sweet enough for me, but, if you would rather have a sweeter bowl of oats, please feel free to add in some honey or maple syrup. Also, feel free to add in almond slivers or any other nut your heart desires.
Tropical Oatmeal BowlPrint
- 1 cup coconut milk
- 1/2 cup rolled Quaker® Oats
- Dash of salt
- 2 cardamom pods and 1/4 teaspoon of cardamom
- 1/2 cup pineapple chopped
- 1/2 cup papaya chopped
- 1/2 cup mangoes chopped
- Add coconut milk, cardamom pods, cardamom, and Quaker® Oats into a pan and cook over a low to medium flame for 5 minutes.
- Remove from heat and top with pineapple, papaya and mangoes
- Sweeten with honey or maple syrup if so desired - Also garnish with almond slivers if so desired.
If you are sitting there thinking, “hey, I don’t have $250,000 and so won’t miss it anyways” I say win it for the glory! So, head on down to your local Kroger store and mull around there till inspiration strikes! Then don’t forget to come tell me when you win!
