Sure, my heart would remind me of it’s existence when I ran really hard or watched a scary movie, but for the most part, I took it for granted when I was in my twenties. But, when I entered my thirties, my dad was diagnosed with congestive heart failure which made me sit up and take notice of this powerful muscle. He was put on a regimen of pills, and thus began his long and hard battle with a disease that eventually took him from us.

Now, back to the Walnut Encrusted Spicy Salmon with Roasted Chickpeas and Brussels Sprouts you see here. This is really a very easy and quick dinner to throw together. And, because of the flavor from the variety of spices, you hardly need any salt at all.

I simply threw some turmeric, garam masala and paprika spiced, canned chickpeas in the oven to roast while I prepped the walnut, paprika and curry crust for the salmon. When the salmon was ready to go in the oven as well, I sauteed some sliced Brussels Sprouts with an onion, and some ginger and lime and in less than 40 minutes a heart healthy dinner was on the table!

Walnut Encrusted Spicy Salmon with Roasted Chickpeas and Brussels Sprouts

Prep Time: 10 minutes
Cook Time: 40 minutes
Total Time: 50 minutes

Ingredients

For The Roasted Chickpeas

  • 2 cans chickpeas
  • ½ teaspoon turmeric
  • 1 teaspoon garam masala
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

For The Walnut Encrusted Spicy Salmon

  • 1 cup walnuts
  • 1 teaspoon smoked paprika
  • 1 teaspoon curry powder
  • 5 salmon fillets
  • Salt and pepper to taste

For The Brussels Sprouts

  • 3 cups washed and sliced Brussels Sprouts
  • 2 teaspoons freshly grated ginger
  • 1 onion chopped
  • 2 teaspoons lime juice
  • Olive oil
  • Salt and pepper to taste
  • Black sesame seeds to garnish, optional

Instructions

For The Roasted Chickpeas

  1. Preheat the oven to 400 degrees
  2. Wash and rub the chickpeas between towels so the skins rub off (not necessary to do this, but it does make a difference in taste and crispness)
  3. Then toss the chickpeas with the turmeric, garam masala, smoked paprika and season with salt and pepper - if needed.
  4. Arrange on a baking sheet and pop into the oven for 35 minutes.

For The Walnut Encrusted Spicy Salmon

  1. While the chickpeas are roasting, place the walnuts in a plastic bag and give them a few blows with a heavy spoon or rolling pin (or you can use a food processor though I think the plastic bag option is more fun)
  2. Then toss the roughly crushed walnuts with the smoked paprika and curry powder and place on the salmon fillets
  3. Season with salt and pepper to taste (if desired) place on a foil lined baking tray and place in the oven (with the chickpeas) for 15-18 minutes

For The Brussels Sprouts

  1. While the salmon and chickpeas are in the oven, saute the onion in the olive oil over medium heat till onion is translucent. Then add in the grated ginger and Brussels Sprouts. Sprinkle the lime juice on top and saute for 10 minutes. If you like the Brussels Sprouts to be charred, then don’t stir the ingredients -making sure to flip them once halfway between the cooking time. Garnish with black sesame seeds, season with salt and pepper if needed and enjoy.

I love nut crusted seafood and salmon is a favourite of mine....lots of healthy fats. I just try to be sure to buy wild. Love that you paired this with crispy chickpeas. Usually, I eat those as a snack, but why not with dinner? Certainly a lovely way to mix things up, right? And brussels sprouts are deeeeelicous. I like to call 'em 'little cabbages', lol. I didn't know that February is heart healthy month but now that I do I will certainly be celebrating it with lots of lovely salmon and definitely this.
