This is a simple Kale and Butternut Squash Sautéed salad that relies heavily on sweet caramelized onions, garlic and ginger for flavor. This warm salad is perfect for these cold months!
- 3 tablespoons olive oil
- 1 red onion chopped
- 2 cloves garlic smashed and chopped
- 1 teaspoon freshly grated ginger
- 3 cups kale roughly torn
- 10 oz bag of frozen butternut squash
- 2 stalks celery
- salt and pepper to taste
- parsley black sesame seeds and pine nuts to garnish with
Add olive oil and chopped onion to a pan over low/medium heat and sauté till onions are caramelized (about 20 minutes or so)
Add in the garlic and ginger and sauté another 5 minutes or so
Add in the frozen butternut squash and sauté till butternut squash is warm
Add in the kale and sauté till kale is wilted
Season with salt and pepper and garnish with parsley, black sesame seeds and pine nuts and enjoy with any Lean Cuisine entrée of your choice.
