Kale Butternut Squash Sautéed Salad

This is a simple Kale and Butternut Squash Sautéed salad that relies heavily on sweet caramelized onions, garlic and ginger for flavor. This warm salad is perfect for these cold months!

Ingredients

  • 3 tablespoons olive oil
  • 1 red onion chopped
  • 2 cloves garlic smashed and chopped
  • 1 teaspoon freshly grated ginger
  • 3 cups kale roughly torn
  • 10 oz bag of frozen butternut squash
  • 2 stalks celery
  • salt and pepper to taste
  • parsley black sesame seeds and pine nuts to garnish with

Instructions

  • Add olive oil and chopped onion to a pan over low/medium heat and sauté till onions are caramelized (about 20 minutes or so)
  • Add in the garlic and ginger and sauté another 5 minutes or so
  • Add in the frozen butternut squash and sauté till butternut squash is warm
  • Add in the kale and sauté till kale is wilted
  • Season with salt and pepper and garnish with parsley, black sesame seeds and pine nuts and enjoy with any Lean Cuisine entrée of your choice.
