A quick and easy muffin recipe that takes your bowl of cereal and converts it into a portable and delicious - on the go snack!
- 1 egg at room temperature
- 1/4 cup coconut oil melted
- 1/4 cup honey
- 3/4 cup milk of your choice at room temperature I used Lactose-free
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 cups Berry Colossal Crunch cereal roughly ground up in a plastic bag with a rolling pin
- 1 cup flour of your choice I used gluten free as that's all I had
Pre-heat the oven to 350 degrees
Mix the wet ingredients - the egg, coconut oil, honey and milk in a bowl and set aside
In a separate bowl, mix the baking powder, salt, flour and ground up cereal
Add the wet mix to the dry flour/cereal mix
Place spoonfuls into a lined muffin tray
Bake for 20-22 minutes
