Comforting, quick and oh so easy, this ginger spiced, Sweet Potato and Egg bake is a no brainer for those busy breakfasts or dinners!
- 2 Sweet potatoes
- 2 tablespoons olive oil
- 2 teaspoons fresh grated ginger
- 3 eggs
- 1 teaspoon smoked paprika
- 1 teaspoon cilantro
- salt and pepper to taste
Preheat oven to 425
Peel and cut sweet potatoes
Add olive oil to an oven safe pan and toss in sweet potatoes and ginger and mix well
Place in oven for 20 minutes
Remove from oven, make 3 "well" and crack eggs into "wells"
Sprinkle on paprika, salt and pepper and cilantro and bake for another 10 minutes.
Enjoy warm for breakfast or dinner!
