Craisins® & Quinoa Breakfast Bake

This is an easy, aromatic and scrumptious breakfast bake that draws on the sweet and tart flavoring of Craisins® along with a slew of warming spices. A slice of this is sure to add a zing to your day and maybe put a pep in your step! :)

Ingredients

  • 1 cup coconut milk or milk of your choice
  • 1/4 teaspoon cardamom
  • 1/4 teaspoon cloves
  • 1/4 teaspoon ginger
  • 1/2 teaspoon cinnamon
  • 2 eggs
  • 3/4 cup Cranberry Almond Craisins® Fruit Clusters
  • 1/2 cup uncooked quinoa
  • 3 tablespoons Craisins® Dried Cranberries
  • 1/8 cup honey
  • 1 tablespoon slivered almonds

Instructions

  • Into a greased, oven-safe pan, add in the Cranberry Almond Craisins® Fruit Clusters
  • Then add in the uncooked quinoa
  • In a separate bowl, stir together the milk, eggs, cardamom, cloves, cinnamon and ginger
  • Pour this over the quinoa and Cranberry Almond Craisins® Fruit Clusters
  • If placing this is the fridge overnight, then wrap with plastic and place in the fridge and bake the next morning. Or, bake immediately.
  • Either way - just before baking, top this with Craisins® Dried Cranberries, and slivered almonds and drizzle the honey over the top
  • Bake for 55 minutes at 350
  • Enjoy warm with fruit, coconut whipped topping and/or honey
