Enjoy this light and tasty, yet not overly sweet, Lime Yogurt Custard in Delicata Squash Boats this holiday season. This is one dessert you won't need to undo your belt for! :)
- 3 eggs
- 2 siggi's skyr vanilla yogurt 5.3 oz
- 1/4 cup coconut sugar or brown sugar
- Zest of one lime
- Juice of 1/2 this lime
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 2 Delicata Squash cut in half
Preheat oven to 325 degrees
Add the eggs, yogurt, lime zest and juice, coconut sugar, vanilla and almond extracts to a bowl and mix well till all ingredients are well incorporated
Spoon this lime custard into the delicate squash bowls
decorate with bits of lime zest
Bake for 40 minutes
Let cool and enjoy
