Chicken & Cashew Curry Recipe

Ingredients

  • 1 onion chopped
  • 1 inch piece of ginger chopped
  • 4 cloves garlic chopped
  • 1 cup water
  • 1 5.5 fl oz. can of coconut milk
  • 1 bag Beyond Meat's Grilled Chicken-less Chicken Strips
  • 1/2 cup cashews
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon chili
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1 teaspoon fresh lemon juice
  • olive oil
  • salt and pepper to taste

Instructions

  • Saute the onions, garlic and ginger for about 15 minutes on a medium flame
  • Add the spices and coconut milk and water and stir well
  • Add the Beyond Meat Chicken, cashews and lemon and let simmer for about 6-8 minutes
  • Sprinkle with chopped green onions and enjoy
